  • wheat flour - 450 g;
  • salt - 0.5 teaspoon;

The dumpling for dumplings in a Mulinex bread machine is kneaded in different modes, depending on its model. This can be the mode “Pizza dough”, “Dough”, etc. For most Mulinex bread machine models, the whole process takes 1.5 hours - it may seem a long time, but during this time the machine properly mixes the dough and insists it. So after the end of the cycle, you can immediately start making dumplings.

You will need:

  • flour - 4.5 cups (the volume of dishes - 200 ml);
  • chicken egg - 1 piece;
  • water - 400 ml;
  • vegetable oil (sunflower or olive) - 1 tablespoon;
  • salt - 1 teaspoon.

Cooking

  1. Pour the vegetable oil in the form of a bread machine (it is better to always pour the oil directly on the mixer - this will facilitate the work of your assistant).
  2. Dissolve salt and egg in warm water, then pour this solution into a mold.
  3. Pour the sifted flour on top.
  4. Close the lid, set the "Dough" mode and press the start. The whole cycle of kneading and settling will take 1.5 hours. During this time, you can just cook the filling.

Dumplings will be more tender if the dough for them is kneaded in sour milk. This is especially true for berry fillings (for example, cherries). The dough for dumplings on kefir can also be kneaded in a bread machine.

You will need:

  • flour - 400 g;
  • kefir 2.5% - 200 ml;
  • chicken egg - 1 piece;
  • salt - 1 pinch.

Cooking

  1. Mix warm (!) Kefir with egg and salt, pour into the form of a bread machine (as you understand, kefir in this recipe replaces water).
  2. Sift the flour and pour it into the mold.
  3. Set the "Dough" mode (or another suitable one, depending on the model). It will be mixed for 20-30 minutes, then it must be left to swell in the bread machine or on the table, covered with cling film (in some bread machines the “Dough” mode already implies the settling of the dough and takes at least 1.5 hours).

In order for the dumpling dumplings in the bread machine to always become soft, elastic, and make delicious dumplings with any filling from it, a number of rules must be observed:

  • always sift the flour before pouring it into the mold;
  • water should be warm (not cold, so that all the ingredients combine well);
  • although a certain temperature condition is created in the bread machine, still do not put it on a draft so that cold air does not enter the ventilation openings and the temperature inside the device does not decrease;
  • check if the stirrer is on the axis of the mold;
  • firmly insert the form so that its elements properly contact the elements of the device itself.

In most cases, the following instructions are indicated in the instructions for the bread maker: first we put liquid ingredients, then loose ones. Pay attention to the sequence of bookmarking products in the instructions specifically for your model - this is a very important point if you want to get a really high-quality product.


All bread machines, as well as their hostesses, are individual, and often an individual approach is needed to the device. There are times when things are not going very smoothly, but these nuances can be easily dealt with.

  • The ingredients are not going to lump.  If the mass is too loose and does not form into a homogeneous substance, add a little water. It should be added a little, literally a teaspoon, while mixing.
  • After kneading, the mass is too liquid.  Add a little flour (1-3 tablespoons). If you notice this at the end of the mixing cycle, simply turn on the “Dough” mode again.
  • The bread machine does not knead.When you turn on the kneading mode, immediately pay attention to whether mixing of products occurs. If the ingredients do not move, then you forgot to put the mixer, or the shape does not fit snugly to the bottom of the stove. It is very easy to put the mixer - just push the part onto the axis without removing the products from the mold. The quality of the test will not be affected.

Tip:  do not violate the recipe and the proportions of the test, because in this case it will not work delicious. Kneading the dough is a delicate matter, it is better to check several times before making an irreparable mistake.

Dumplings with potatoes and mushrooms recipe

Ingredients for the dough:

  • Egg - 1 pc.
  • Salt - 1 tsp
  • Water - 265 gr.
  • Sunflower oil - 2 tbsp.
  • Flour - 600 gr.

For filling:

  • Potato - 500 gr.
  • Champignons - 250 gr.
  • Onion - 1 pc.
  • Salt, pepper - to taste

Dough recipe for bread dumplings:

Add salt and egg to the water and stir until dissolved. This liquid should be 325 gr. An average egg weighs 60 grams, but there are small and large eggs. Therefore, whoever has a kitchen scale, I advise you to first beat in the egg, and then add as much water as necessary, so that the scales show 325 g. Next, add 2 tbsp. oil to liquid.

It remains to add only flour.

Lay liquid and dry ingredients in the sequence that is specified specifically in your bread machine. Set the "dough" mode. After the baker has given a sound signal about the end of the regime, remove the dough from it, cover with a towel and let it “stand” for 30 minutes.

Let's move on to the filling: fry the onion with mushrooms until tender.

  Potatoes can be boiled and mashed not liquid. But, personally, I do it differently: bake the potatoes in their uniform in the oven or steamed, cool, peel and soften it with a fork. I do this because I believe that the filling for dumplings should be as dry as possible so that the dough during molding does not become wet from the filling and does not lose its elasticity.


  Next, mix the potatoes with onions and mushrooms, not forgetting to salt and pepper.




  We proceed directly to the modeling.

  We roll out the dough, form a “circle” for future dumplings with a cup or a glass.

  We put the stuffing and fasten the ends.



  So we get "classic" dumplings. But there is another way, I came up with it myself, but I can’t guarantee that the first, perhaps many also thought of such a way.

So, my way: put the filling in the middle of the circle, cover it with another circle and pinch along the edge. Dumplings come out evenly dense, as a result of which they do not boil during cooking.


  We freeze some dumplings (it is convenient to do this on chopping boards sprinkled with flour). Cook part.


  Bring the water to a boil, add 1 tbsp. salt (based on 1.5 l). Throw the dumplings, wait until they come up, reduce the heat and cook until cooked (about 5-7 minutes).


  Ready dumplings with potatoes and mushrooms are very tasty served with sour cream and herbs.
