  • apple cider vinegar - 1 tbsp. l.
  • sour cream - 4 tbsp. l.
  • mustard - 1/4 tsp.
  • dill - 0.5 bunch

Preparation

1. Pickled onions are in perfect harmony with salted herring, herbs and eggs, which are included in the recipe. So let's pickle the onions. Cut it into small pieces and place in a deep bowl. Add a couple of pinches of granulated sugar and salt, pour apple or table vinegar, and maybe lemon juice. Pepper a little. Stir. Leave to marinate for 15–20 minutes. Stir occasionally to ensure all the onion pieces are well marinated. Adjust the amount of salt and sugar to your taste.

2. While the onions are pickling, prepare the sauce, although you can use regular mayonnaise for the roll. Take sour cream with a fat content of 20–25 percent. You can use thick classic yogurt. Add mustard, season with salt and ground black pepper. Mustard can be used either sweet or spicy. Stir and taste.

3. If you purchased a whole carcass of salted herring, cut off the fins, head, remove the entrails, and remove the skin. Separate the loin from the spinal bone. And for the lazy, there is a better option: you can buy peeled salted herring fillets in any supermarket. Cut into small pieces.

4. Hard-boil the eggs and chop them on a coarse grater.

5. Fresh dill or parsley are perfect for greens. Wash the branches and tear off the leaves. Finely chop.

6. Spread a sheet of pita bread measuring 30 × 40 cm on a clean work board or kitchen table. Spread sour cream sauce on it. Spread with a spoon throughout the pita bread. Sprinkle with chopped dill.
