How to make okroshka from kefir or mineral water. Okroshka on kefir with mineral water and mustard. Okroshka on kefir with mineral water recipe with photo

This very tasty okroshka made with kefir and mineral water is my favorite during the hot season, along with. The dish turns out aromatic, satisfying and refreshing. In the recipe I indicated the proportions that my family and I love. If you wish, you can reduce or increase the amount of certain ingredients.

For example, add more vegetables, sausage, or even replace it with boiled beef or chicken. For the okroshka recipe, it is better to choose kefir of medium fat content. With low-fat or one percent kefir it will be less tasty. To prepare okroshka, “Doctor’s”, “Molochnaya” or “Children’s” sausage from a trusted manufacturer is best.

Ingredients:

  • 3 eggs
  • 250 g boiled sausage
  • 2-3 fresh cucumbers
  • 2-3 potatoes
  • 100 g radish
  • 1 liter of sparkling mineral water
  • 0.5 l kefir 2.5% fat
  • bunch of greens (green onions, dill, parsley)
  • salt to taste

How to prepare okroshka with kefir and mineral water:

Wash the potatoes thoroughly. Place it in a small saucepan, cover with cold water and boil until tender. To prevent the potatoes from overcooking, we will not peel the skins first. Cool the finished vegetables, peel and cut into medium-sized cubes.

Wash the chicken eggs, put them in a ladle with cold water and put them on the fire. We will cook them for 9-10 minutes after boiling, so that the yolk inside becomes hard. Let the eggs cool, peel and cut into cubes.

Wash the radishes and trim off the stems. Chop the vegetables into cubes, following the recipe for okroshka with kefir and mineral water.

We will clean the cooked premium sausage from the packaging and cut it in the same way as other ingredients.

Wash the cucumbers and trim the ends. Cut the vegetables into cubes. If the peel on cucumbers is thin and tender, then you don’t have to peel it.

Wash and finely chop the green onions and dill so that the okroshka made with kefir and mineral water will be aromatic. If desired, you can add parsley.

In a deep bowl, mix all the crushed ingredients. Place them on serving plates.

Mix kefir, mineral water and salt in a separate bowl and then pour the resulting mixture over the prepared ingredients in plates. I usually use the proportions of kefir and mineral water for okroshka 1:2. I like to first add kefir to the plates, and then add mineral water, achieving the desired taste and desired consistency of okroshka.

Hello, hello everyone!

How are you? Are you celebrating the red spring? On the agenda today is delicious okroshka with mineral water. We have already prepared classic versions with kvass, and the Russian bread drink itself in previous posts.

Then let's prepare a dish using your favorite fermented milk product. I searched and collected plenty of recipes. Although it would seem that it would be difficult to cook. Many good housewives already remember and keep in mind their favorite recipes. But, I’ll tell you a secret, there were options that I never knew about. And I really liked them.

They differ in the composition of the products and the preparation process. ABOUT! And here is the content. Choose according to your taste, tie on an apron and go!

Cold soup with mineral water and sour cream

Our selection opens with classic okroshka, but with the addition of low-fat sour cream. This is one of my favorite options. What do you prefer? Do you add this dairy product or not? If you have never tried it, then let’s prepare a delicate, refreshing dish step by step.

Required ingredients:

  • Kefir - 1 liter;
  • Mineral water - 1 liter;
  • Sour cream 10% - 500 ml;
  • Chicken eggs - 5 pieces;
  • Potatoes - 5 pieces;
  • Cucumbers - 3 pieces;
  • Doctor's sausage - 500 gr.;
  • Mustard - 1 teaspoon;
  • Dill - 1 bunch
  • Salt and pepper - to taste.

Cooking process:

1. Boil jacket potatoes and eggs until tender. Then cool them well.

2. Take a large bowl. We will put all the chopped ingredients into it.

3. Finely chop fresh cucumbers on a board.

Some cucumbers with particularly rough skins are best peeled. This will make the dish even more tender in taste.

In addition, you need to cut a piece from the thick part of these vegetables and taste them. It happens that it becomes very bitter, especially when farmers do not water the bushes well. Cut off all the bitter part and throw it away.

4. Immediately pour the cubes into a bowl.

5. Free the cooled eggs from the shell. We also chop them into small cubes and place them in a bowl.

6. Remove all the skin from the potatoes. We also chop it finely. In general, we try to cut everything the same size.

7. Remove the film from the sausage. We cut it first into plates, then into strips. And then chop it into small squares.

8. Wash the dill in a bowl of running water. It is better to cut off rough sticks.

These sticks can then be added to other dishes when cooked. They will give a wonderful aroma.

9. Chop the tops of the vegetables and throw them into the total mass. Mix everything well with a wooden spatula.

10. Pour kefir into a separate bowl or pan and add sour cream. Mix into a homogeneous mass.

11. Add cold mineral water to them.

12. Literally mix half a ladle of the mixture with mustard in a separate bowl. We pour the resulting mixture back.

13. Add salt and black pepper as desired.

14. Pour all the chopped salad into the kefir filling. Using a ladle, stir the finished soup and pour it into bowls.

What a piquant delicacy we got!

It’s good to add a slice of fresh Borodino bread here and you can crush it on both cheeks.

Bon appetit!

Video about how to make a first course with vinegar

Usually they cook with vinegar without kefir. And instead they just add sour cream. But after a long search, I found such an interesting recipe. The soup has a slight sourness and is perfectly refreshing in the summer heat.

An important point - do not overdo it with vinegar. It’s better to take a little, and then, if it doesn’t seem like enough, add a little more. Have fun cooking, and how - watch a short video from YouTube.

Low-calorie okroshka for weight loss

Oh, and here’s a recipe for those who care about their figure. In addition, cold soup is very helpful in the summer for fasting days. There is no meat in it, and we’ll use low-fat kefir. The only thing is that I added some potatoes to the composition. But you don’t have to put it in so that the dish turns out completely dietary.

Required ingredients:

  • Boiled chicken eggs - 4 pieces;
  • Boiled potatoes - 2 pieces;
  • Radishes - 6-7 heads;
  • Fresh cucumber - 2 pieces;
  • Green onions, dill and parsley - a bunch each;
  • Kefir 1% - 500 ml;
  • Mineral water - 500 ml;
  • Salt and pepper - to taste.

Cooking process:

1. Take a comfortable and roomy pan. We wipe it dry.

Tip: instead of chicken eggs, you can use quail eggs. By the way, they are even more useful than the first ones. Usually 3 quail will successfully replace one chicken.

2. Peel the eggs and potatoes. Cut the eggs into cubes. I used a vinaigrette here. This is a very convenient kitchen item for salads and always helps me out when chopping. I note that it is better to use it to cut boiled and soft foods.

3. Pour the eggs into the pan.

4. Cut the potatoes into slices. We put them in a pile and pass them through the vinaigrette. You get neat cubes.

5. We throw them into the pan with the eggs.

6. Add the radishes cut into cubes.

7. Finely chop the onion feathers and all the greens.

8. Add the greens to the rest of the ingredients. Mix everything thoroughly with a spoon.

9. At this stage, add salt and pepper. And I recommend adding very little salt. It retains fluid in the tissues of the body. And in summer conditions it is difficult to remove. Which, of course, does not contribute to active weight loss.

10. Take a jug and pour in half a liter of chilled kefir and half a liter of mineral water. Shake all the liquid well.

Now you can put the salad in bowls and pour in the kefir-mineral liquid. Serve to the table.

Store the dish and filling separately in the refrigerator. We prepare as needed.

Cooling kefir soup with boiled sausage

Initially, in the old days, only meat and no sausage were put in okroshka. It was either baked or boiled in advance. But nowadays we really like boiled sausage in a dish. Because, firstly, it saves time on cooking meat. And secondly, the sausage pieces do not disintegrate into fibers. On a plate, the dish looks much more aesthetically pleasing and pleasing to the eye.

Required ingredients:

  • Kefir - 1 liter;
  • Mineral water - 1 liter;
  • Boiled chicken eggs - 4 pieces;
  • Potatoes - 4 medium pieces;
  • Cucumbers - 2 pieces;
  • Radishes - 5 pieces;
  • Boiled sausage - 300 gr.;
  • Green onions, dill and parsley;
  • Salt and pepper - to taste.

Cooking process:

1. Cool the boiled jacket potatoes and eggs and then peel them. Wash cucumbers, radishes and greens with water and dry.

Boiled sausage can be taken doctoral or amateur. I know meat lovers who prefer sausage with fat.

2. Chop all products, except greens, into cubes of 0.5-1 cm. Finely chop the greens on a board. We put everything on a separate large plate.

3. Pour cold mineral water into an enamel saucepan. Add a liter of kefir to it. Add spices and mix everything well.

4. Place the chopped products into the pan and stir again so that they are evenly distributed.

5. Cover with a lid and put in the refrigerator for an hour. Then pour into plates and serve.

You can garnish with half an egg before serving.

Interesting and tasty recipe with chicken

Well, let’s cook it the old fashioned way with natural meat. To do this, we use boiled chicken breast in spices. Everything turns out tasty, satisfying and nutritious.

Required ingredients:

  • Chicken breast - 1 piece;
  • Chicken eggs - 5 pieces;
  • Potatoes - 5 pieces;
  • Fresh cucumber - 3 pieces;
  • Greens - 4-5 types;
  • Garlic cloves;
  • Kefir - 1.5 l.;
  • Mineral water - 1-1.5 l.;
  • Mayonnaise - 5 tablespoons;
  • Herbs and spices for boiling chicken;
  • Salt and pepper - to taste.

Cooking process:

1. Boil the chicken breast in boiling water with spices for 25-30 minutes. In a separate saucepan, cook eggs and jacket potatoes.

2. Cool the breast, potatoes and eggs. We clean the latter from skins and shells.

3. Wash the cucumbers and chop them into cubes.

It tastes better if you grate some of the cucumbers.

4. Eggs either with a fine knife or three on a coarse grater.

5. Finely chop the breast with a sharp knife and place on a plate.

6. You can treat potatoes like eggs. Cut it into small pieces or grate it.

7. Take more greens. Dill, parsley, green onions, basil and cilantro will add an unforgettable aroma to the dish. Especially if it comes from your own garden.

8. Don’t forget to rinse it well in a basin, shake it free of water and finely chop it with a knife. Let's do the same with garlic.

9. Let's prepare the dressing. In a bowl, whisk together mayonnaise and kefir. These two textures combine well with each other into a single whole.

10. Add mineral water, spices to taste and whisk again.

11. Chopped vegetables and meat can be mixed immediately with the dressing, or poured in a bowl right before serving.

But before eating it is better to cool the food in the refrigerator.

Various greens;

300 grams of meat or sausage;

Preparation

1. We sort out the sorrel. Cut it finely and throw it into the pan.

2. Add the rest of the chopped greens: onion, dill, parsley. Add a little salt and rub lightly with your hands so that the greens are slightly moistened and release juice.

3. Add boiled and chopped potato tubers.

4. Add eggs and cucumbers.

5. Cut sausage or lean meat. We also send it to okroshka.

6. Pour in kefir and mix. Add the required amount of salt.

7. Pour mineral water directly into the pan, stir and serve!

Boiled meat or chicken cannot always be cut neatly. To make small and even pieces, you need to keep the food in the refrigerator. The products will become stronger and cut easily.

The okroshka will be much more flavorful if you put all the greens separately, then lightly rub them with your hands. For better juice release, you can add a little salt.

If you get a lot of okroshka, you don’t need to immediately pour in the liquid and add spices. You can set aside some of the dry, chopped foods and put them in the refrigerator. You can make fresh cold soup at any time.

Okroshka is not only a wonderful cold soup, but also a wonderful salad. Set aside some of the dry ingredients. Season some of it as okroshka for lunch. And in the second part you can add sour cream or mayonnaise and use it as a salad for dinner.

If kefir acid is not enough, then citric acid, citrus juice or vinegar are added to cold soups. You can also add chopped sorrel leaves.

Okroshka made with kefir and mineral (carbonated) water. 5 step-by-step okroshka recipes

Hello dear readers!

Just recently we discussed some quite interesting topics with you. We talked about simple recipes for making okroshka with kvass and kefir. And today I want to reveal a few more ideas with mineral water. It is added to the composition to improve the taste and make the soup a little liquid.

Let's look again at what okroshka is? Firstly, this is a cold soup, it is usually prepared in the summer. Boiled and fresh vegetables are crumbled into it, and a little meat or sausage is added. Pour all this deliciousness with kefir and mineral water, kvass or whey. Many people try to use drinks such as ayran or tan, and are very pleased with the result.

For this type of okroshka, you can use mineral water, both carbonated and still. The taste will primarily depend on such important products as kefir and water. And to add sourness to your soup, you can add lemon juice or a little vinegar. This is the case if the milk drink is bland. Therefore, before adding anything, be sure to try the dish.

Classic version of okroshka with sausage

Let's start with the most classic version. Today we will prepare delicious okroshka with sausage. The recipe will be quite ordinary, but you should still watch it.

I advise you to take better milk or cream sausage. Try not to skimp on this important ingredient. After all, the taste of the dish depends on this.

We will need:

  • Kefir - 1 liter
  • mineral water - 0.7 ml.
  • sausage - 300 gr.
  • Egg - 4 pcs.
  • potatoes - 3-4 pcs.
  • cucumber - 4 pcs.
  • greens (dill, onion) - to taste

Preparation:

1. Let's prepare all the products before starting cooking. Don't forget about a saucepan or deep bowl. Boil the potatoes in their skins until tender in salted water. Then cool, peel and cut it into plates, then into cubes.

2. Boil the egg and remove the shell. We will cut one part and grate the second part (preferably fine). We will cut it similarly to potatoes. We put everything into a common bowl.

3. Wash the cucumbers thoroughly. We remove the stalks. If necessary, you can peel it. Cut either into half rings or into cubes. Grate one cucumber on the same fine grater.

4. We clean the sausage from the film. First we cut it into rings, then into strips, and then into cubes. If you don’t quite like this cutting method, you can use your own.

5. We cut the greens arbitrarily, larger or smaller. Whoever likes it, you don’t have to put it in at all. But then it won’t quite look like summer soup. Pour into a common bowl with the rest of the ingredients. Mix everything well, at this point you can add salt.

Pour kefir into the prepared okroshka. Mix everything thoroughly. Then pour in the soda in a small thin stream. Stir constantly so as not to overdo the water. You know that kefir can be quite different.

By the way, this version of okroshka can also be prepared with kvass. In general, almost all recipes are identical. But each has its own zest. Please note that in this dish we cut half of the ingredients. But some part was still grated. This is because this way the soup will be thick and very rich.

The simplest recipe for mineral water with mustard

Okroshka is one of the most popular soups in the summer. It is valued not only for its cooling qualities, but also for its ease of manufacture. Let's look at another version of a simple but very tasty dish. Anyone can handle this. The main thing is to have the desire and everything will work out.

We will need:

  • Cucumber - 2 pcs.
  • radishes - 5 pcs.
  • Doctor's sausage - 400 gr.
  • Chicken egg - 4 pcs.
  • greens (green onions)
  • mustard - 8 gr.
  • Horseradish - 10 gr.
  • Kefir - 500 ml.
  • potatoes - 3 pcs.
  • mineral water -300 ml.
  • mayonnaise - 10 gr.

Preparation:

1. Wash the radishes and cucumbers. Peel off the skin if necessary. Then remove the stalk. We will not cut these two products. Let’s grate it, it will be faster and quite satisfying.

2. Peel the doctor’s sausage from the film and cut into cubes.

Pay attention to the expiration date and appearance of this delicacy. The fact is that this dish does not undergo heat treatment. Therefore, the products must be fresh.

3. Boil the potatoes, preferably in advance. Giving it time to cool will make cutting it much easier. Peel the skin and cut into cubes. When you put the chopped vegetable into a common bowl, knead it with your hands, separating it from each other. It tends to stick together.

4. Boil the egg until cooked. Liquid yolk is not allowed in this case. Cool and chop as finely as possible. Add to the rest of the ingredients.

Then we put all our chopped ingredients into a deep bowl. Add mayonnaise, mustard and horseradish here. Stir, you can add salt if necessary.

Pour in kefir in a thin stream and stir. We also add mineral water here. If for some reason you are afraid that the soup may turn out to be liquid or, on the contrary, very thick. You can mix the two products in a bowl in advance, and then pour it over the okroshka.

Once the soup is completely mixed, add the herbs. Wash the green onions and shake off excess water. We cut it randomly, large or small, the choice is yours.

The finished dish can be served to the table. The layout shows the average weight of mustard, horseradish and mayonnaise. If you know that someone prefers more mustard, serve it separately in a separate saucepan. And on the side you can decorate with a small sprig of dill or parsley.

Cooking summer soup with kefir and vinegar

Summer is just around the corner, so it’s worth getting ready. I bring to your attention a light soup. It will not only quench your thirst and cool your body, but also saturate your body. And kefir will speed up your metabolism. Well, let’s try and create a miracle soup.

We will cook in a 5 liter saucepan. Therefore, the ingredients listed below will go to this volume.

We will need:

  • Potatoes - 2-3 pcs.
  • cucumber - 2-3 pcs.
  • radishes - 6-9 pcs.
  • carbonade - 200-250 gr.
  • Egg - 2-4 pcs.
  • mineral water - 1.5 liters
  • kefir - 800 ml.
  • sour cream - 120-150 gr.
  • Salt - 0.5-0.7 tablespoons
  • table vinegar 9% - 0.5 tbsp
  • greens to taste

Preparation:

1. Boil the potatoes, you can use them in their skins or peel them in advance. Cool, peel, cut into cubes. If the vegetable falls apart a little, don't be disappointed. Chop it as finely as possible. When you put it in a common bowl, scatter it to the sides. So that during the cooking process it does not end up in a lump.

2. Wash the radishes and cut off the stalks. If in some places the skin is not completely clean, you can peel it with a knife, or better yet, cut it off. So that when you eat, you don’t get this piece. It will be very unpleasant to see him at ease. We won’t cut it, but grate it on a coarse grater. It will turn out no worse than chopped.

3. Wash the cucumbers and remove the stalk. You can also remove the skin, it all depends on the person’s preferences. First cut lengthwise, then into strips and into cubes.

4. In this case we use carbonate. You can use cream sausage. The main thing is that it is without fat. Cut into cubes and place in a common bowl with the rest of the ingredients.

5. Boil the egg in the classic way. Cool under running cold water. We peel the shells and cut them arbitrarily, but not coarsely.

6. You can use absolutely any greens. The main thing is that there is a lot of it. This way your soup will turn out very rich and healthy. We wash the greens, shake off the remaining water and, in our case, chop them as finely as possible.

Place all ingredients in one pan. Pour kefir on top and stir everything. Salt to taste, add mineral water, stirring constantly. This action is necessary to correctly determine the consistency of the dish. Then add vinegar, again as desired, mix everything thoroughly.

The finished soup can be served. It is better to cool it by covering it with a lid and putting it in the refrigerator. This way it will become even colder and richer, all products will be saturated with the aroma of kefir. If you don’t plan to eat it right away, you don’t have to fill it with kefir at all, but simply put it in a cold place.

Cold dish with chicken meat

What could be better than natural meat as part of a dish? Agree that your own is much tastier and healthier than any sausage from the store. Plus, this is a good option if there are no meat delicacies in the house, but you have a piece of excellent meat on hand. It doesn't matter if it's chicken or beef. The main thing is to prepare a delicious soup and please your family.

We will need:

  • Potatoes - 5 pcs.
  • fresh cucumbers - 2-3 pcs.
  • boiled egg - 5 pcs.
  • radishes - 7 pcs.
  • chicken breast (boiled) - 300 gr.
  • Kefir (thick) - 700 ml.
  • mineral water - 500-700 ml.

Preparation:

1. Prepare the chicken fillet. Let's boil it in salted water in advance. We will cook until done. After cooling, cut into cubes. Pour into the prepared bowl or saucepan.

2. Wash the radishes and remove rot (if any). We cut randomly, but not coarsely. Grate one or two radishes.

3. Wash the cucumbers and remove the stems. If necessary, remove the skin. We will not cut into large cubes. Grate one cucumber.

4. Boil the egg. During cooking, you can add a little salt so that if the shell cracks, the protein does not leak into the water. And rolled up and cooked until done. Cut in the same way, into cubes.

5. Wash the greens, shake off the remaining water. Can be dried with a paper towel. Chop as finely as possible.

Place all the ingredients in a deep bowl. Salt to taste, fill with kefir and mineral water. Stirring constantly.

This is such a savory dish we got. Which will give you strength and saturate the body. Try it before it gets cold, just kidding.

Total cooking time: 35-45 minutes.

Number of servings: 7-8.

Ingredients:

  • cucumbers – 2 pcs.
  • potatoes – 3 pcs.
  • eggs – 4 pcs.
  • radishes – 10 – 12 pcs.
  • boiled meat or boiled sausage – 240 g

  • dill – 3 – 4 sprigs
  • kefir – 0.5 l

  • salt.

Recipe

  1. Boil and cool 3 potatoes and 4 eggs. When they are completely cool, peel them and cut them into cubes. Also, cut 2 fresh cucumbers into cubes.
    When cutting ingredients for okroshka, try to keep the size of the cubes the same so that the taste of any one product does not stand out sharply.
  2. Wash and cut the radishes (10 -12 pcs.). Remember that the radish pieces should be about the same size as the potato, egg and cucumber pieces.

There is also a variant of okroshka made with kvass:

Boil the potatoes in their skins, let cool and peel off the skins.
Cut the potatoes into cubes and place in a large bowl or pan.
We also cut the ham or boiled sausage into cubes. Instead of ham, you can use cervelat. You can take chicken, veal, pork, in principle, almost any meat is suitable.
Transfer the sausage into a bowl with the potatoes.

Now let's take care of the cucumbers: cut half of the cucumbers into small cubes, you can first peel them. And grate the remaining half. Thus, we get a good, pleasant consistency and thickness of the okroshka, and additional juiciness and tenderness. Transfer the cucumbers to a bowl.
Grate the radishes on a coarse grater. You can take more radishes, it adds juiciness and piquancy to the okroshka, but again, be guided by your taste and how spicy your radishes are.
We also transfer the radishes to the bowl with the vegetables.

Finely chop the dill and green onions.
We add a good pinch of salt to the remaining greens and knead them a little with our hands so that the green onions and dill give us some of their juice.
Add the greens to the bowl with the vegetables.
And also add boiled chopped eggs to the okroshka.

Mix everything well. Add salt and freshly ground pepper to taste.
And finally, mix cold kefir with cold sparkling or mineral water. Instead of mineral water, you can simply take clean filtered or boiled water.
And we season our vegetables with diluted kefir.
Mix everything and the okroshka is ready. Season it to taste with salt and pepper, if you want, you can add a little acid to taste, for example lemon juice or a little vinegar, if your taste requires such sourness.

Pour the okroshka into plates and sprinkle with herbs when serving.
