Blini are one of the most popular Russian dishes, especially during Maslenitsa. There are many different ones, but one of the best is kefir pancakes with boiling water. If you mix the dough with kefir, you get tender pancakes that easily come off the pan. These pancakes simply cannot fail even with a very experienced housewife. Is it possible to knead pancake dough using old kefir and hot water? Perhaps baking kefir pancakes with expired kefir is one of the best ways to recycle it, because it will turn out very tasty.

Thin or fluffy pancakes?

Of course, making pancakes starts with the dough. The thickness, fluffiness and airiness of the pancakes depends on what kind of dough you prepare. Pancakes made with kefir often turn out lacy (with holes), since kefir slightly carbonates the dough. This dough is a little thicker than dough for pancakes made with milk or, so if you want to get thin pancakes with kefir, you can add a little water.

If your goal is to make fluffy soft pancakes, then it is better not to add water to the dough.

If you first add boiling water to the flour, you will get so-called custard pancakes. Recipes for pancakes made with kefir and boiling water are very popular among housewives, as such pancakes turn out lacy, that is, with many small holes. But you can cook thin pancakes with kefir in another way. How? Read in our article!

What to consider when preparing pancakes with kefir

Let's talk in more detail about the various intricacies of preparing the dough.

Adding soda

Most housewives add baking soda to the kefir dough. When mixing soda with the acid contained in kefir, a chemical reaction occurs: carbon dioxide is released and the dough becomes more porous. It is very important to maintain the correct ratio. For one liter of kefir, take from one incomplete teaspoon to two teaspoons of soda. If you put more, the taste of the pancakes will be spoiled by an unpleasant aftertaste, and if there is less soda than required, the pancakes may turn out to be too sour and will not rise.

Sifting flour

If you want to make airy ones, it is advisable to pre-sieve the flour. This will help saturate the dough with air, making the pancakes lighter.

Oil for frying pancakes

Pancakes should be fried only in vegetable oil. Butter is not suitable. It is best to use good quality refined sunflower oil.

Recipe for thin pancakes with kefir

Let's move on to the recipe for pancakes with kefir. There are many of them, but today we have chosen a recipe for you. These fluffy pancakes don't tear when flipped.

You will need:

Ingredients

When preparing pancake dough, it is advisable to follow the following preparation sequence:

  • Beat eggs with sugar.
  • Pour soda into kefir, stir and leave for five minutes. Kefir should rise.
  • Add flour and kefir to the eggs with sugar, mix well so that there are no lumps. It is better to add kefir in parts.
  • Add vegetable oil and salt. Stir.

You can read about another, no less successful and easy way to prepare fluffy pancakes.

Features of baking pancakes

The next important point when preparing pancakes is baking.

First you need to pour vegetable oil into a frying pan and heat it up. Add very little oil. We need the pancake not to stick to the pan, and it shouldn’t float in the oil.

It is convenient to pour the dough with a ladle. Take enough dough so that it covers the entire bottom with an even thin layer. When the dough hits the pan, shake it from side to side to evenly distribute the dough along the bottom.

Pancakes cook very quickly, usually no more than half a minute. Lift one edge of the pancake to check for doneness. If the bottom of the pancake is golden in color, turn it over with a special spatula or a wide knife. Experienced housewives often turn pancakes by simply tossing them in a frying pan, but beginners should not engage in such experiments.

A few seconds are enough for the second side of the pancake to cook until done. Remove the pancake, place it on a plate and start preparing the next one.

If you like fluffy pancakes, then cook them with kefir.

It is on this fermented milk product that they come out delicate and fluffy.

Well, there’s no need to talk about their taste, they are beyond praise!

Kefir pancakes are the most delicious if you follow a number of simple rules when kneading the dough.

Cooking pancakes with kefir, general rules

Leave the milk for other occasions for now; today we are preparing very tasty pancakes with kefir. First of all, remember that the dough for such pancakes should not be too thin.

Second point: if you want the pancakes to be thin, dilute the pancake dough with mineral or regular boiled water. There is a recipe for making custard pancakes; in this case, the flour needs to be boiled with boiling water.

Sometimes the recipe for pancakes with kefir contains soda. Thanks to it, pancakes become porous and have an airy structure. The trick is that soda reacts with kefir, which, as you know, contains acid.

As a result, carbon dioxide is released, making the pancakes spongy and fluffy. There is a simple ratio of soda to kefir; it must be observed so that the finished dish does not give off an unpleasant odor.

Please remember: for one liter of kefir, take 1-2 teaspoons of baking soda. Fry the pancakes in a frying pan greased with vegetable oil.

There is no need to pour too large portions of dough, otherwise the pancakes will turn out thick and will not roll well. To ensure that the layer thickness does not exceed the norm, when pouring the dough, make circular movements. Do not hesitate when forming the pancake, because the pan is very hot.

The recipe for making pancakes with kefir is almost no different from other techniques for baking flour products in a frying pan.

You need to scoop up a portion of pancake batter with a ladle and pour it into the bottom of a hot bowl. Make sure that the pancakes are browned on both sides and that the edges are not too dry.

Pancakes are turned over using a wooden spatula. Be sure to follow this rule if you bake them in a non-stick pan.

Any metal objects (knife, fork) can damage the surface of the pan and make it unsuitable for further use. Experienced cooks can easily flip pancakes in one motion, throwing them into the air.

To prevent kefir pancakes from sticking together, grease them with butter. Place the cooled dish in the microwave, turning it on to “Reheat”. Delicious kefir pancakes go well with a variety of fillings.

Depending on what recipe you are making, use salty or sweet minced meat. Serve the dessert dish with condensed milk or jam; sour cream or other sauce with a neutral or salty taste is suitable for snack pancakes.

How to prepare dishes and food before cooking pancakes with kefir

Lush and very airy pancakes are obtained only from sifted flour. If you do not prepare this ingredient properly, you will not saturate it with oxygen, which means that kefir pancakes will not have a porous structure.

Get the eggs in advance. After standing at room temperature for a couple of hours, they will warm up and whip better.

Heat kefir in the microwave to a temperature of 35-37 degrees, so sugar and salt will dissolve in it faster. Peasant butter must be melted before adding it to the dough.

Do not use tap water, it must be boiled and cooled.

To knead the kefir dough you will need an enamel bowl and a whisk (see photo). It is most convenient to measure the required amount of food with a tablespoon and a teaspoon.

Weigh the flour on a special kitchen scale or measure it in a glass. You also cannot do without a ladle and a brush for greasing the pan.

There is a special frying pan for baking pancakes with kefir; it does not need to be greased with oil. If you don't have one, cast iron cookware or one that has a Teflon coating will do.

Set aside aluminum frying pans for other purposes; pancakes will burn in them.

The following recipe requires adding boiling water to the dough. To analyze it in more detail, you need to study the list of ingredients and cooking techniques.

Recipe No. 5: Instantly cooked pancakes with kefir

A simple recipe can be useful when decorating a holiday table. Very tasty pancakes are prepared in a hurry, however, they will become a favorite delicacy of guests.

To knead the dough, take: 100 ml of cream and kefir; 0.5 teaspoons of soda; an incomplete glass of flour; half a teaspoon each of soda and lemon juice; 10 g granulated sugar; 1 egg; a little salt; 2 tbsp. spoons of butter; ¼ stick of butter and a jar of red caviar.

Preparation:

  1. Beat the white of a raw egg with granulated sugar.
  2. Shake the cream with the yolk and mix with the protein foam.
  3. Add slaked soda to the bowl.
  4. Pour in kefir, warmed to room temperature.
  5. Sift the flour twice and add it to the dough in small portions.
  6. Salt the mixture and bake quick pancakes in a greased frying pan.
  7. While the pancake is still hot, grease it with butter and fill it with red caviar (see photo).

Caviar can be served separately, placed in a beautiful bowl.

  • When greasing the frying pan, you can use a pastry brush, or you can make do with improvised means. Our grandmothers made a small whisk out of feathers and dipped it in vegetable oil. In urban environments, this advice will not work; feathers are not so easy to get.
  • I advise you to cut a potato tuber or an apple and prick it with a fork. Use the cut side to walk along the bottom of the frying pan, after dipping the vegetable in a container with vegetable oil.
  • Grease hot pancakes with butter and cover with a napkin. This way, the dish will remain hot and will not be saturated with excess moisture. It is better to melt the butter and pour the kefir pancakes before they cool down.
  • If the recipe contains vegetable oil, add it at the very end. Add only fresh eggs to the pancake batter. Firstly, it will protect you from infections; secondly, they whip better.
  • Flour, even if you sifted it after purchase, cakes and needs to be sifted again. When kneading the pancake dough, prepare a fine sieve.
  • The neutral taste of kefir pancakes allows you to experiment with fillings. Try stuffing the dish with caviar or lightly salted salmon, fried mushrooms, rice and egg. Fans of meat fillings will love chicken or minced meat fried with onions.

My video recipe

The days of spring-winter confrontation are approaching, which end with a cheerful and at the same time sad, delicious holiday - Maslenitsa. This holiday came to us from our ancestors - the Slavs who lived in the territories of Russia, Belarus and Ukraine.

Maslenitsa acts as a certain milestone, before which the cold reigned supreme, and after that spring warmth comes into its possession. And after the winter fading of nature, it returns to life. The revival of life is the main subject of celebration.

Maslenitsa was also popularly called Baba's Week. On these days, engagements were often held, and in an earlier period, among the Slavs, marriages took place. Another thing to celebrate is fertility. These days, virginity, motherhood, and wisdom were praised.

The springtime songs that girls sang on the edges of the forest, in groves, and near ponds were a call to the earth for the forces of good and a request for Mother Nature’s blessing for the new harvest year.

But the negative qualities of women were not avoided. So, for example, on Friday, on a return visit, the son-in-law invited his mother-in-law to the house, along with her relatives and friends, treated them to vodka and said: “Drink, good people, so that my mother-in-law’s throat doesn’t dry out!” Which was a hint at the “sharp tongue” of the mother-in-law.

At the end of the festivities, there was the burning of an effigy of winter, the ashes of which were scattered across the field, thus consecrating the earth.

On Maslenitsa, the main attribute of the table is pancake. According to the scientific version, among the Slavs, pancake was a funeral bread, with very deep symbolism. A round pancake is a hint of eternity; it is warm - a hint of earthly joy; it is made of flour and milk - a hint of life. The custom of giving the first pancake to the poor to remember the dead, saying: “The first pancake is for the repose,” confirms this version.

There is another version regarding the pancake, which has been known since the 19th century: the pancake is the personification of the image of the Sun, round and golden.

Pancakes are baked with yeast, milk, kefir and water and served with various jams, sour cream, and condensed milk. You can stuff them with meat fillings, cottage cheese, mushrooms, and caviar.

Today we will prepare pancakes with kefir, for which there are a large number of recipes. We have selected the best recipes for sunny pancakes.

Pancakes with kefir: main principles of preparation

Before making dough for pancakes and baking them, I recommend that you familiarize yourself with the main principles of their preparation. These are the recommendations of the famous culinary expert in Ukraine - Alla Kovalchuk.

1. The dough should be homogeneous. If you feel that there are lumps, the dough needs to be rubbed through a sieve.

2.First, liquid products are mixed, and then dry ones. You need to add dry ingredients to liquid ones, and not vice versa.

3. For 1 pancake with a diameter of 26 cm, you need 50 ml of dough.

4. Eggs should be at room temperature. Ratio of eggs to kefir: 1 egg to 1 cup of kefir.

5. For 1 glass (250 ml) of kefir, add 50 g of sugar. Sugar gives the pancakes a golden color.

6. For 180 g of flour – you need 0.5 tsp. soda Add soda to the flour only when half of the flour has been added to the dough according to the recipe.

7. To obtain holes (openwork) in pancakes, the dough must be boiled with boiling water. The amount of boiling water should correspond to the amount of kefir in the dough.

8. To make the pancakes tender and soft, you need to add melted butter at the rate of: 1 cup flour - 50 g butter.

9. The pan for pancakes should be heated over high heat, and the pan should be baked over medium heat. Then the first damn thing won't be lumpy. We bake them on the first side for 1-2 minutes, and on the second side for 30 seconds, this is for the first pancake.

Sunny pancakes – 50 pieces in just an hour, classic version

When a large family gathers at one table, and everyone is not indifferent to such a dish as pancakes, there should be a lot of them so that there is enough for everyone. This recipe, as they say, is what we need. You get a lot of pancakes, a beautiful golden color with holes and very, very tasty.

We need:

  • kefir 1% – 1 l 250 ml (5 tbsp)
  • eggs – 5 pcs
  • flour – 900 g (5 tbsp)
  • sugar – 250 g (1 tbsp. and 2 tbsp.)
  • salt – 1/2 tsp.
  • butter – 250 g
  • boiling water – 5 tbsp.
  • soda – 2.5 tsp, without a slide
  • vegetable oil

Preparation:

1. Beat the eggs and pour kefir into them, mix vigorously.

2. To get 5 glasses of boiling water, put the kettle on the fire.

3. Add sugar to the resulting kefir mass and mix everything.

4. While stirring, add half the amount of flour to the mixture, mix everything vigorously.

5. Now it’s soda’s turn. After that, add the rest of the flour and mix.

6. To give the pancakes some delicacy, add boiling water and mix everything quickly so that the mass is homogeneous.

The dough should be 15% similar to sour cream. We leave it to rest so that the gluten in the flour begins to work.

7. Afterwards, to soften the taste of the pancakes, you need to add melted butter in the oven (this is faster). But, before getting into the dough, its temperature should be 25 degrees (we determine it with a finger - it should be warm).

Mix well.

8. Take a frying pan with a non-stick coating, grease it with vegetable oil, and heat the pan over high heat.
Pour the dough into a ladle, distribute it, and bake over medium heat for 1-2 minutes, the first pancake.

Then the pancake is turned over to the other side and baked for 30 seconds. Place the finished pancake on a plate and grease with butter.

Baked pancakes are stacked, but no more than 30 pieces, because the top ones will put pressure on the bottom ones and they will turn out soft.

9. Pancakes are served with sour cream, jam, honey. From them you can make apple cake, bags with meat and mushroom filling, sheets and other things that your imagination tells you.

I just made pancakes) I made kefir pancakes for the first time. We got it!!! With a pleasant kefir sourness, just right with strawberry jam! They turned over easily, the only thing I didn’t understand was if I made the dough thick or if it turns out that way in principle (thicker than with 100% milk). There were even hints of holes))) In general, for a change, you can really put the recipe in your piggy bank. Thanks to the author! (P.S. I made it with half a liter of kefir).

Hello, everything, everything, everything

We baked it with kefir yesterday. I always make it with kefir. And I only did it once with milk. We made the dough. We bake the first pancake. And dad comes home from work. I tried it and added 4 more spoons of sugar and vegetable oil to the dough. It’s good now, he says. The pancakes did not reach the plate from the frying pan))). Or rather, they arrived, but only to cool down and go straight into the mouth. In the end, only 3 pancakes accumulated)), so I only dream about piles of pancakes as an esthete.

Thanks for the recipe. Very tasty, thin pancakes. Some are filled with curd, the rest is without filling, but also delicious.
I took a photo, but I don’t know how to post it here.

I want to make it with kefir, but I only have half a liter. Tell me, is one box enough or is it better to have two? Or beat the third and take half?
Answer: Lily, one egg should be enough.

The pancakes are delicious, sour, and very filling. They turned out well, but I would have added a little baking soda to make them more holey.
I think that for a novice housewife, you need to give a more accurate amount of flour.

I baked pancakes. This was my debut of kefir pancakes. Of course, I didn’t immediately get used to the frying pan and a couple of pancakes were lumpy :-). But then everything went like clockwork. Thanks for the recipe. I liked it.

I’ve been making these pancakes for many years, but with one caveat – I don’t add sugar, not at all. Then they don't burn. And I don’t grease the pan - sunflower oil prevents the dough from sticking to the pan. I determine the thickness of the dough as follows: the dough should flow from the spoon in a thick stream, but not fall off like when frying pancakes. My entire large family loves these pancakes. Very good recipe and pancakes bake very quickly!

Very tender and tasty pancakes. Thicker than with milk. But with a unique sourness. The whole family really enjoyed it, thank you!
