Recipe 3. Olaf salad ( with cod liver, egg, potatoes, leeks and green peas)

We bring to your attention another version of the salad, which is decorated to resemble the snowman Olaf (the hero of the Disney cartoon "Frozen"). It turns out to be a very beautiful and at the same time satisfying and tasty dish. This salad can even be prepared for a family New Year’s table, because all the events in the cartoon take place in winter. It is advisable to decorate the dish immediately before serving so that the layer of egg white decoration does not wear off. You can easily customize the recipe for this salad to suit yourself by choosing your favorite or familiar products.

Ingredients:

✵ cod liver (canned) - 2 jars;
✵ chicken eggs - 4 pcs.;
✵ egg yolk - 4 pcs.;
✵ potatoes ‒ 2 pcs.;
✵ leek (stem) ‒ 1 pc. (can be replaced with onions);
✵ green peas (canned) - 4 tbsp. spoons;
✵ lemon juice - 1-2 teaspoons;
✵ mayonnaise ‒ 150 g;
✵ black pepper (ground) - to taste;
✵ salt - to taste.
For decoration:
✵ egg white - 4 pcs.;
✵ olives (pitted) - 10-15 pcs.;
✵ Baby carrots (4-5 cm) – 1 pc.;
✵ nori (pressed seaweed for sushi) ‒ ½ leaf.

Preparation

1. Remove the cod liver from the oil (you won't need it) and finely chop or mash with a fork.
2. Hard boil the eggs, cool and peel. Set aside the whites of 4 eggs for decoration, chop the rest (4 whole eggs and 4 yolks) and add to the salad.
3. Boil the potatoes in their jackets, cool and cut into small cubes.

4. Wash the leek and chop finely. Important nuance! Leeks can accumulate dirt between the leaves, which are tightly attached to the stem. Therefore, it needs to be washed in a cut form: cut the upper part of the stem lengthwise (not all the way) into 4 parts so that streams of water can penetrate between the layers and drive away sand and dirt.

5. In a deep salad bowl, combine all the chopped ingredients (potatoes, eggs, leeks), add green peas, salt and ground black pepper to taste, freshly squeezed lemon juice, mayonnaise and mix it all thoroughly.

6. You can prepare a template for Olaf’s head in advance (draw it from memory or print the picture on A4 sheet and cut it along the contour with scissors).
7. Choose a suitable large flat dish (preferably dark in color so as not to blend in with the salad) and place the template in the center. Make a cornet from parchment paper, put 1 tbsp in it. spoon of mayonnaise and trace the template along the contour so that Olaf's mayonnaise sketch remains on the plate.
8. Without going beyond the boundaries of the stencil sketch, lay out the salad in parts with a tablespoon.
9. Level the surface of the salad with your hands, giving Olaf's head a more regular shape, and generously coat with the remaining mayonnaise.

10. Grate the egg whites, set aside for decoration, on a fine grater.
11. Drain the olives in a colander, dry lightly with a napkin and chop very finely.

12. Looking at the black and white picture, place grated egg white and chopped olives on top of the mayonnaise layer. Using cutlery, make the necessary bulges and depressions to make the salad textured and voluminous. Using a toothpick and a knife, draw contours along which you can then lay out the eyebrows, eyes and mouth, make a nose from a mini-carrot, and cut out hairs for the forelock from pressed seaweed.

Bon appetit and new culinary masterpieces!

Video: how to prepare New Year's salad “Snowman”

It’s not difficult to prepare the New Year’s “Snowman” salad, especially if you watch the suggested videos.

The snowman is one of the most beloved winter characters, whom we often associate not only with winter and snow, but also with New Year's celebrations. Each of us probably remembers at least one fairy tale or cartoon where a snowman helps Father Frost or Santa Claus. Therefore, it is quite logical to decorate some festive dishes for the New Year's table in the form of snowmen or decorate them with appropriate figures.

A culinary snowman, unlike a real snowman, does not have to be made up of three parts - you can easily get by with two: the head and the body. This design will be more compact and stable, especially when it comes to desserts and snacks and you need a vertical figure.

A vertical snowman can be built from eggs, fastened with skewers, or from balls made from various snack or dessert mixtures. An important condition is that the mass must be viscous and thick in order to keep its shape well.

It is better to grate products for snack mass or pass them through a meat grinder rather than cutting them. When dressing, it is advisable to add not only mayonnaise or butter to the mass, but also soft cheese - it will give the mass the desired viscosity.

You can roll the balls in coconut flakes, finely grated protein or grated hard cheese. The ideal option, of course, is protein - since the cheese has a yellowish tint, and not everyone likes coconut flakes.

To decorate the snowman, you can use different vegetables, cutting out the necessary parts from them, black peppercorns, clove buds, nuts, prunes, olives, sprigs of dill and parsley. You can also make scarves for snowmen from green onion feathers, unwrapped crab sticks, and thinly sliced cheese.

A dessert snowman can be created from curd mass, coconut candy mass, or potato cake mass if you cook it with condensed milk and add cream cheese.

Coconut shavings, powdered sugar or white confectionery sprinkles are also suitable for deboning. In some cases, you can use melted white chocolate or icing sugar.

You can decorate the dessert snowman with dried fruits (prunes, dried apricots), nuts, candied fruits, small confectionery and sprinkles. Some details and hats can be cut out from marmalade or marshmallows.

Try not to hold the balls together with skewers or toothpicks, as many recipes advise. Guests (especially children) may not immediately notice an inedible element in a soft appetizer or dessert, which will lead to unpleasant consequences. If you use a mount, then choose decorative skewers that will be visible to guests and will not spoil the design of your dish.

In order for the snowman figurine to be stable, make the bottom ball flat on one side, and on the other side press the mass a little inward to form a recess. When you install the top ball, its bulge will be in this notch and the ball will not fall.

Before assembling the figures, keep the dessert and snack balls in the refrigerator so that the mass hardens and does not float. Some recipes advise freezing the balls, but here you need to take into account the composition of the products - whether freezing will spoil the taste and how the dish will behave when it begins to thaw before serving.

When assembling a snowman, you can glue the balls together with soft cheese (both appetizer and dessert), softened butter, melted chocolate or jam (desserts). Once assembled, place the dish back in the refrigerator to harden.

When choosing ingredients for appetizers and desserts, make sure that the ingredients go well with the dish and do not spoil or interrupt its taste. This point is often overlooked when focusing on the beauty of the design.

Black peppercorns and other similar ingredients can be replaced with small pieces of vegetables - they, of course, are very convenient for decoration, but still not intended to be eaten.

If you plan to serve snowmen not on portioned plates, but on a common platter, then it is better to immediately place the figures on crackers, cookies, toast, etc., so that it is convenient for guests to move the snack to their plates and the snowmen do not fall apart. Think about what tools are more convenient to do this: a spatula, a wide fork, or something else.

A large dish in the shape of a snowman will also look beautiful.

For example, you can lay out a layered or regular salad, forming it in the shape of a snowman and decorate it with vegetables and herbs, giving the snowman a familiar appearance.

You can make a snowman cake, because the cakes are often baked in round pans. All you need is to join cream-layered cake layers of smaller and larger diameters, and then make the overall cake covering and decor. At the junction of the cakes, it is better to trim them a little and coat the sides with jam or cream to glue them together. It is better to assemble the cake immediately on the dish on which you plan to serve it.

An ordinary round cake can be turned into a snowman's face using cream or icing.

You can also cut out or sculpt snowmen from pastry fondant and create a whole fairy-tale composition.

Pies in the shape of a snowman, buns, cheesecakes, puff pastries - you can do anything with the dough, so your snowmen will turn out to be very diverse.

And of course, one cannot ignore cookies and gingerbread cookies in the shape of snowmen, painted with colored icing and decorated with a variety of confectionery decorations. For this New Year's baking, you can choose any familiar recipe, because the main thing is the shape and decoration. Surely, the younger members of the family will join you with great pleasure, because all children love to draw, and painting funny snowmen with sweet colors is a very exciting activity!
