Galette cookies. Biscuits - composition and calorie content, step-by-step recipes for making them at home. Snack of biscuits with curd cheese

Dry biscuits at home.

  • 100 g flour (premium grade or half and half whole wheat)
  • 30 g starch (I used corn starch)
  • 2 tbsp. l. odorless vegetable oil
  • 2 tbsp. l. Sahara
  • 1 tbsp. l. milk
  • 1 egg
  • 1 tsp. vanilla sugar
  • 1 ⁄ 2 tsp. baking powder
  • a pinch of salt

Galette cookies are dry, slightly sweet and not greasy diet cookies. I have long wanted to make dry biscuit cookies at home, like “Maria,” since I, my husband and our daughter often use this type of cookie. In the composition of industrial cookies, I was always confused by the presence of palm oil, margarine, or even worse, some kind of “cooking fat” (one can only guess what the manufacturer means by this). I compiled the recipe by reading the ingredients of the cookies on the package and choosing the proportions intuitively. Removed all extraneous additives Palm oil I replaced vegetable milk and powdered milk with regular milk.
It turned out very delicious cookies, in my opinion, tastes better than most store-bought counterparts. It is brittle and crispy, but at the same time tender, I was very pleased with the result. I especially liked the version made with whole wheat flour and half white, but it also turns out delicious with regular white flour.
It turns out to be approximately 40-42 pieces.
P.S. By the way, this is an excellent cookie option even for small children, especially if they are allergic to store-bought cookies. For the little ones, if desired, you can replace the milk with water, do not add vanilla sugar, and reduce regular sugar. Then such cookies can be given to children from 6-8 months.

Preparation:

Mix flour, starch, baking powder.

Place all other ingredients in a container - butter, sugar, vanilla sugar, milk, egg, salt.

Beat lightly with a hand whisk until smooth and light foamy.

Gradually add the dry mixture, first kneading the mixture with a spoon.
Then form into a ball with your hands and knead a little. If necessary, if the dough is still sticky, add a little more flour. The dough should be soft, pliable, not sticky to your hands, but not hard.

Next, the dough needs to be rolled out thinly; it is quite difficult to roll out because it contains little fat.
I rolled it out directly on an inverted baking sheet. This is very convenient because you don’t need to move the cut out cookies anywhere, and they don’t get deformed. If desired, you can roll it out on the table and transfer it to a baking sheet using a spatula.
Roll out the dough very thinly, about 2 mm. This way the cookies will turn out crispy (note that the cookies will still rise due to the baking powder).
You see, even my baking sheet is see-through in places.

Cut out cookies with cookie cutters or cut into rectangles.

Its calorie content averages 300-350 kcal. Per 100 grams there are about 10 grams of proteins and fats, 65 grams of carbohydrates, the rest is water. The calorie content of biscuits of dietary varieties may be less. If you try to determine the calorie content of one cookie (which is very difficult to do, since they are all different shapes and sizes), then 300 kcal can be divided by approximately 30. Based on such calculations, it is easy to conclude that this delicacy is not too harmful for the figure, but at the same time, it perfectly satisfies hunger.

Cookies of this type are not only pleasant in taste, but also one of the healthiest that exist. The main ingredients for preparing it are water and flour, so it is non-allergenic, dietary and low-calorie.

Many people know these cookies by the “Maria” variety. There are quite a lot of fans of this cookie, despite the apparent simplicity of its taste.

Then the layers are connected so that the biscuits become multi-layered. You can cut cookies into squares or circles. Be sure to pierce it to avoid swelling under the influence of temperature. In general, these cookies can be made only from flour and water (as in original recipe). This option is definitely the most dietary option, harmless to the stomach, and the cookies will be stored for an incredibly long time.

It is more pleasant to drink tea with cookies, especially with fresh and homemade ones. To please yourself and your household, try making crispy biscuits.

What are biscuits, how did they appear?

Galettes are dry, crispy cookies, but French cuisine such a concept is a combination of several dishes that are some varieties or substitutes for bread or pancakes. The name, by the way, is translated as “boulder” or “pebble”, which is due to certain external similarities with smooth stones.

The history of the origin of biscuits supposedly goes back to Brittany, but the exact time period in which such a dish appeared is, unfortunately, unknown. Initially, it was intended to replace bread during long campaigns, expeditions, and also during war. And such unique flatbreads really had all the qualities of baked goods, but at the same time they perfectly retained their properties for a long time and did not spoil.

It is known that Christopher Columbus took biscuits with him when he went on long voyages. At that time, such cookies were the basis of the diet of soldiers and sailors, but then they “migrated” to the tables of ordinary Frenchmen, and later spread throughout Europe.

What are they made of?

The simplest traditional biscuits are made from flour and water, sometimes adding salt or sugar. Flour can be either the familiar wheat flour, or buckwheat, oatmeal, corn, or any other flour. The composition may also include fat, that is, oil. IN modern cookies eggs are also added, as well as various flavorings and fillers, for example, vanillin, poppy seeds, cinnamon, zest, and so on.

Depending on the composition, there are dry or simple biscuits (that is, crackers, low-fat cookies), as well as fatty ones with the addition of margarine or butter (the fat content can reach 15-20%). All of them have such qualities as a light porous structure, lack of moisture, and rapid absorption of water. But if fatty biscuits are stored for a maximum of six months, then the shelf life of simple dry ones can reach two years.

Are biscuits healthy?

The benefit of biscuits lies in their nutritional value, because flour is a source of carbohydrates, which are used to produce energy. It also contains B vitamins, which take part in many processes occurring in the body and are responsible for the smooth functioning of the nervous system.

The composition includes potassium, which is beneficial for the heart, phosphorus, which is necessary for the brain, iron, which improves blood composition, sodium, which is responsible for the water-salt balance, eliminates increased muscle and vascular tone, magnesium and other substances. By the way, biscuits can be consumed while breastfeeding.

Either way, biscuits should be consumed in moderation, but if overused, they can cause harm.

  • Firstly, it can disrupt digestion and cause constipation.
  • Secondly, it is worth remembering that biscuits belong to flour dishes, so they can lead to excess weight gain if you eat them often and in large quantities (especially fatty ones with a high oil content).
  • In addition, sweet biscuits increase blood glucose levels, and salty biscuits can cause fluid retention in the body and, as a result, edema.

The calorie content of dry biscuits is about 280-290 calories, while fat biscuits are higher in calories (up to 400 kcal).
