He stood in the cold overnight, i.e. about 10 hours + another 2 hours to warm up at room temperature (total 6.5 hours of proofing + 10 hours in the cold + 2 hours to warm up = 18.5 hours instead of 24).
I didn’t notice any difference in the taste of this bread compared to the previous one.
