Minced meatballs can be made from any meat, I used pork + beef. I make the minced meat in advance and store it in the freezer. Ready minced meat I defrost it and put it in a deep bowl.

I add buckwheat, boiled in advance, to it, a little less in volume than minced meat.

Then I add eggs, mayonnaise, finely diced onion, salt and spices.

Mix everything thoroughly until smooth.

We form small balls from the resulting minced meat and place them on a hot frying pan. You can roll the meatballs in breading, but I do without this step.

Fry the meatballs over medium heat in vegetable oil on both sides until golden brown.

Then put the onions, chopped with feathers and grated carrots into the same frying pan.

Fry the vegetables for literally 2-3 minutes until soft and add tomato paste and finely chopped garlic.

Fry everything together for a couple more minutes and add water. Add salt and spices to taste, bring everything to a boil and turn off.

Place the fried meatballs in a slow cooker or any deep frying pan, such as a saucepan.

  • salt, ground black pepper - to taste
  • flour - 3 tbsp. l.
  • vegetable oil for greasing the pan
  • buckwheat – 1/2 tbsp.

Preparation

1. Of all the listed ingredients, buckwheat will take longer to cook. This is why, at the very beginning of cooking, this cereal needs to be poured with boiling water and brought to half-cooking. Pour the buckwheat into a bowl and pour boiling water into it (twice as much as the cereal). Cover the bowl with a lid and set aside to swell.

2. In order not to waste golden time, you can prepare the minced meat for the meatballs while the buckwheat is swelling. Place the mince in a large bowl, make a well in the center of the mince and crack the egg directly into it.

3. The next ingredient will be onions. If you use onions, cut them into small cubes (but still chop them and do not mince them: this will make the meatballs more juicy). If you have green onions, chop it completely - both the green stems and the white parts. Add onion to minced meat.

4. Then salt and pepper the minced meat and mix it well with a spoon.

5. Look into the bowl with buckwheat: if it has already noticeably increased in size, add it to the minced meat and mix everything again. You can also add a little flour here if the minced meat turns out watery.

6. Place flour for breading the meatballs in a small plate. Rinse your hands and, using damp palms, form the minced meat into balls. Roll them in flour and place on greased vegetable oil baking pan (or parchment paper).

7. Apply tomato paste to the meatballs. There are two options here: either grease each ball with pure tomato paste, or dilute the paste with water and simply pour it over the entire baking dish. Then place the meatballs in the oven and bake for 40 minutes.
