Today I want to invite you to cook meatballs in sour cream sauce. This is a simple, easy to prepare and very tasty dish that is relevant all year round.

Juicy meatballs with gravy are a completely independent dish in themselves. Supplement them with a light salad or side dish - you will get a nutritious and very appetizing dish that will leave few people indifferent. You can cook meatballs in sour cream sauce in a frying pan or in the oven; today I’ll tell you how to cook both options. Shall we begin?!

Prepare the ingredients according to the list.

Based on the basic minced meat, we will prepare two versions of meatballs - classic meatballs and hedgehog meatballs with rice.

Boil the rice in advance. To do this, rinse a portion of rice, drain the cold water and pour hot water over the rice. Add a pinch of salt, bring the rice to a boil and cook for 10-12 minutes until almost fully cooked.

Combine minced meat, finely chopped onion and garlic in a bowl. Beat a chicken egg with 1-2 pinches of salt.

Add beaten egg, mustard, herbs and spices to taste and ground black pepper to the minced meat. Mix everything thoroughly and beat the minced meat for 2-3 minutes until it becomes viscous and dense.

To prepare hedgehog meatballs, add rice to the minced meat and mix everything thoroughly. I divide the minced meat in half and prepare two versions of meatballs at once.

With your hands soaked in water, form the minced meat into small meatballs. If you plan to cook the meatballs in the oven, you can make them larger - they will bake well, and you won’t have to worry that the minced meat inside will not be fully cooked. To cook meatballs in sour cream sauce in a frying pan, it is better to prepare small meatballs - they will cook faster.

Grease your hands with vegetable oil and lightly roll the meatballs in your hands again. The oil will create a thin protective film on the surface of the meatballs - the meatballs will turn out a little more juicy and rosy.

Place the prepared meatballs in the refrigerator for 20-30 minutes to cool. At this stage I freeze some of the meatballs.

While the meatballs are cooling, prepare the sauce. Finely chop the onion and grate the carrots.

Add a little vegetable oil to a preheated frying pan, add the onion and, stirring, fry for 2-3 minutes. Then add the carrots and fry everything together for a few more minutes until the vegetables are soft.

Add wheat flour and, stirring, fry the mixture for a few more minutes until the flour changes color.

If desired, also add a little tomato paste and fry everything together for a few more minutes.

Gradually, stirring, pour hot broth or water into the pan. Add sour cream and mix everything thoroughly. Bring the sauce to a boil over low heat.

Add 1-2 bay leaves, herbs and spices to taste. I have ground coriander, cumin, oregano, dried garlic, suneli hops and a mixture of Provençal herbs. Also add a little sugar, ground black pepper and salt to taste. Reduce heat to low and simmer the sauce for another 2-3 minutes.

Heat a small amount of vegetable oil, place the chilled meatballs in a frying pan and fry on both sides until golden brown, about 4-7 minutes (depending on size).

Place the fried meatballs in the sauce. Bring the sauce to a boil, reduce the heat to low and simmer the meatballs for another 25-30 minutes, covering the pan with a lid.

You can also place the fried meatballs in a baking dish, pour over the sauce and bake in the oven until done (my favorite option). Pour the sauce into the pan until it reaches about halfway up the meatballs. Cover the pan with foil and place in an oven preheated to 100-110 degrees for 30 minutes.

To cook raw, not pre-fried meatballs in sour cream sauce in the oven, place the meatballs in a mold, add the sauce so that the meatballs are 2/3 immersed in it. Place the pan in the upper part of an oven preheated to 200 degrees. Bake for 12-15 minutes until the meatballs are golden brown, then cover the pan with foil, reduce the temperature to 180 degrees and bake for another 20-25 minutes until done.

Sprinkle the finished meatballs with fresh herbs and serve.

  • 3 cups broth or water;
  • 2 tablespoons sour cream;
  • 1 onion;
  • 2 tablespoons flour;
  • 1 tablespoon of sugar (without a slide);
  • 2 tablespoons vegetable oil;

Peel the onion and chop it very finely. Heat the oil in a frying pan and fry the onion. There is no need to fry it too much, just bring it to a translucent state, sprinkle the onion with flour and mix well so that all the flour is saturated with oil.

We dilute tomato paste and sour cream in broth or water, pour this mixture in a thin stream into the frying pan, stirring gently with a whisk. Salt the sauce, add sugar and spices. Let it simmer for 5-7 minutes. The sauce can be used for baking meatballs; it can also be poured over the finished dish.

Tomato-sour cream sauce with mushrooms

Mushroom sauce prepared with sour cream and tomato paste is very tasty. It is suitable not only for meatballs, but also for other dishes - cutlets, chops. Even ordinary fried or boiled potatoes, poured with this gravy, will become much tastier.

  • 200 gr. champignons;
  • 1 onion;
  • 150 ml sour cream;
  • 0.5 tablespoon of tomato paste;
  • 50 gr. dill;
  • 0.5 teaspoon salt;
  • 1 tablespoon vegetable oil for frying.

Peel the onion and chop it very finely. We wash the champignons and chop them into small pieces.

Pour oil into a frying pan, as soon as it warms up, fry the onion in it. When it becomes translucent, add the champignons and continue cooking, stirring occasionally.
