  • 120 ml water;
  • 3 tbsp. Sahara;
  • 1 egg;
  • 7 g yeast;
  • 450 g flour + a little for dusting;
  • 1 tsp salt;
  • 50 g butter.

  • 1 egg;
  • 1 tbsp. milk;
  • small bag of sesame seeds.

Homemade hamburger buns recipe

1. Mix warm milk with water and sugar in a bowl. It is recommended to heat the bowl in advance under running hot water. Water with milk can also be slightly heated to about 37 degrees, but not higher, so that the yeast is not damaged.

2. Add the egg and mix. It is also advisable to take it out of the refrigerator in advance and immerse it in warm water for a couple of minutes.

3. Add yeast. It is important to pour them into a warm liquid; in a hot liquid they will die, and in a cold liquid they may not rise.

4. Gently mix with warm hands: the yeast starts working faster from the heat and the dough is better mixed. Cover the container with a towel or lid and place in a warm place for 10-15 minutes.

5. The dough has risen and a light foam has appeared on the surface. Now we can continue.

6. Add flour, preferably sifted. This will make the bun dough more airy.

7. Mix with a spoon and add salt at the end.

9. Melt the butter in a water bath or in the microwave and pour into the dough.

10. Mix until the dough comes away from the walls. The better we knead it, the less yeasty smell will remain. We leave it to rise for 30-40 minutes in a warm place (on a radiator, near a heater or an open hot oven). Cover with a towel moistened with water so that the dough does not dry out.

11. The dough came up - it increased 3-4 times and even stuck to the towel. So it’s better to take more dishes.

12. Roll the dough into a ball on a floured surface. If it sticks to the surface, dust it with flour until the dough absorbs the required amount of flour and stops sticking. But you need to not overcrowd it so that the buns turn out airy, like at McDonald's. Sprinkle flour gradually and check the dough for stickiness. And if the dough still sticks strongly to your hands, it is better to wash them and wipe them dry.

13. Flatten the ball and cut it into 8 pieces. There is another way: simply roll up the sausage and cut it into equal parts (size is optional, but keep in mind that the buns will increase at least 2 times).

14. Roll into small balls and flatten slightly.

15. Form the buns: flatten them, fold the edges and press them underneath so that the top is even, roll them into balls. You can leave the buns to stand for 10 minutes, then knead the dough again.

16. Place the buns on parchment at a distance of at least 5 cm so that they do not stick together, because the yeast continues to work and the dough increases. It is better to lay out the balls in a checkerboard pattern or use several forms. Let the buns rise in a warm place (it will take about an hour for the buns to double in size). You can cover with cling film (just cover, do not tighten, so that the dough swells freely).

17. If you don't cover the dough, it will puff up slightly on top, making the crust easier to grease.

18. The final touch is coating the buns. In order for the sesame seeds to stick to the dough, it needs to be greased. Mix egg and milk. Cover the buns with the mixture using a brush and sprinkle with sesame seeds. Bake in an oven preheated at 180-190 degrees for 13-15 minutes, or until the buns become a pleasant golden hue. It is better to place the baking tray in the middle of the cabinet so that the buns bake evenly. You can leave them to simmer in the oven turned off and slightly open for another 5 minutes in case they are not cooked through in the middle. Remove the pan and cover the buns with a towel. This way the crust will not harden as it cools.

Sesame is the seed of the plant of the same name, which is extremely healthy and widely used in cooking. First of all, sesame is the record holder for calcium content among foods. 100 g of unpeeled seeds contains an average of 975 mg of calcium (but in peeled seeds it is 10 times less). In addition to this macroelement, sesame contains substances that interfere with its absorption (phytic acid). To reduce their content, it is customary to lightly roast the seeds in a frying pan. Among other elements in sesame, it is necessary to note gamma-tocopherols (vitamin E, a powerful antioxidant) and lignans, which enhance the antioxidant effect and improve lipid metabolism in the body.

Probably, as long as fast food has existed, passions have been raging about its harmfulness to health. “Exposing” programs have been shown on television more than once, dozens of books and thousands of articles have been written on this topic.

In turn, representatives of fast food chains are trying in every possible way to rehabilitate themselves by introducing salads, yoghurts and fruits into the menu. They print calorie counts and convince you of the innocence of their wonderful hamburgers. And lately, journalists and bloggers are increasingly being invited to production sites so that they can personally see that their buns are the best in the world, and that their cutlets contain nothing but 100% meat.

This time we were invited to the Italian enterprise MARR RUSSIA (popularly known as Marusya), where they produce 100% of all beef cutlets for McDonald’s restaurants in Russia.

MARR RUSSIA is an independent Italian company that supplies a huge variety of products to fast food chains, hotels and restaurants in Russia.

For McDonald's, they make absolutely all beef cutlets for Russian restaurants. And today there are about 251 of them and they employ almost 25,000 people. The farthest one is in Tyumen and all the cities to the east have not yet been “makdatchen”.

Until recently, the largest McDonald's in the world was a restaurant on Pushkinskaya in Moscow. It now remains the largest in Europe and the most visited in the world of the 118 countries where the fast food giant has a presence. In Russia, about 900,000 people visit McDucks per day.

One of the main features of the Russian market is the lack of a franchise for opening a restaurant. All eateries are directly owned by the company. In most other countries, you can open a McDonald's franchise. Our company management is afraid that the level of service may drop and the quality will be difficult to control.

The central office where the recipes are created is located in Munich. In Russia, McDonald’s has a huge number of suppliers who make cutlets, buns, sauces for them at different factories, grow vegetables, etc. Seafood products come from Norway, potatoes of the Santana and Innovator varieties come from Poland (supply 50 thousand tons per year). Our excursion to the meat production began with the fact that a representative of the Marusya company said that photographing anything is strictly prohibited. After negotiations with the director of the company, we managed to obtain permission to film, subject to their approval of all photographs.

The security measures here are similar to those at a nuclear facility. Everywhere there are people in spacesuits, the meat itself can only be viewed through bulletproof glass, under the gun of laser beams.

Before entering the production facility, employees remove all jewelry and place it in special mini-safes.

When you think about it, now you see the place where McDachny cutlets are produced for the whole country, you imagine giant halls with dozens of moving belts with thousands of semi-finished products.

In reality, everything turned out to be much more modest than imagined. Everything takes place in two main halls. In the first hall there are two main installations. One is for the production of minced meat. Meat is served along two belts: the first - fresh, Russian-made, the second - frozen, foreign.

The meat of our lean cows is very low in fat (about 8%). Therefore, to achieve the required 20% fat for cutlets according to the recipe, it is brought to the level of foreign, fattier meat. 70% is meat from bulls and 30% from cows. By the way, it is precisely because of the lean meat that South Americans consider our hamburgers tasteless. And ours consider their hamburgers too smelly for the opposite reason :)

Frozen.

Proceeding along these two belts, the meat is ground and combined into a homogeneous mass in a 50/50 ratio. Here the receiver of the finished minced meat is already waiting for him.

The minced meat lines up and waits to be taken to the next machine, which will turn it into cutlets.

The main words in production are safety and quality. The temperature of the minced meat “while waiting” should not rise above a certain temperature. This is monitored by a special person with an equally special device.

Having waited its turn, the minced meat is loaded into a molding machine, which makes two cutlets of different thicknesses.

And... drum roll! Here they are, cutlets for all Rus'.

Despite the apparent miniature production, about 1,000,000 cutlets (about 70 tons) come out of this line every day! Which completely covers the demand of all Russian fast food lovers from McDonald’s. Nothing works at night, all equipment is washed and checked.

There are two metal detectors on the production line to ensure that nothing gets into the meat.

All cutlets are frozen and appear in the next room, where they are packaged in special boxes.

In general, the process is of course incredibly simple. The meat is salted and peppered “on the spot”. According to McDonald's employees, nothing else is added to it.

By the way, they said that there is as much sugar in a bun as in a piece of cake. This is done so that during baking a crust will form and the necessary fluffiness will appear.

Speaking of my thoughts, it always seemed to me and still seems to me that McDonald’s products contain flavor and aroma enhancers, as well as other additives. I think they are in sauces. It may be that they are added to bun dough. Whether this is true or not is not known for sure. The company claims that there are no flavor enhancers in their products.

Ingredients:

  • one and a half stack. water;
  • half stack milk;
  • one tbsp dry yeast;
  • three tbsp. l. Sahara;
  • two pinches of salt;
  • three tbsp. oil drain;
  • seven stack. flour;
  • sesame.

Preparation:

  1. Dissolve yeast in warm water.
  2. Bring the milk to a boil and pour into a separate bowl.
  3. Add salt with sugar and butter. Stir until the butter melts.
  4. When the milk mixture has cooled and becomes warm, pour it over the yeast. Stir and add three tablespoons of flour.
  5. Stir the mass, add three more tablespoons of flour.

  2. Heat the milk a little and add the rest of the sugar.

  4. Mix salt with flour and pour into a bowl with milk and yeast. Knead the dough.
  5. When the dough has risen, divide into 10 pieces and form into buns.
  6. Brush the buns with egg and sprinkle with sesame seeds.
  7. Bake on a baking sheet with parchment for 35 minutes in a 200 gr oven.

Cheeseburger patties

The cheeseburger patty is made from beef.

Ingredients:

  • half a kilo of minced beef;
  • egg;
  • three l. Art. breadcrumbs;
  • salt, ground pepper.

Preparation:

  1. Combine the minced meat with breadcrumbs, salt and add ground pepper.
  2. Add the egg to the minced meat and mix.
  3. Form into flat cakes, flatten and level them.
  4. Fry each in oil for 10 minutes.

Assembling a cheeseburger

  1. Cut the bun in half lengthwise and spread hamburger and cheeseburger sauce on the inside of each part.
  2. Place a lettuce leaf on one half of the bun, place a cutlet on top, pour ketchup on it and place a slice of cheese.
