They can be used at your discretion depending on personal taste preferences. The following products can be wrapped:

  • eggs;
  • fish;
  • seafood;
  • meat;

Particularly tasty food combinations include crab sticks and cheese, shrimp and salmon, mushrooms and chicken, or cabbage with eggplant and Korean carrots. Spring is a time for picnics and active recreation. Fresh air invigorates, lifts your spirits and stimulates your appetite. The outdoor menu is simple: light snacks, vegetables, barbecue. An excellent option is fried pita bread with filling. Thin flatbreads go well with fish, meat, herbs, aromatic spices and cheese.

This snack easily copes with hunger and contains much fewer calories than regular bread. In the Caucasus and the Middle East, fried pita bread is a common food. In addition, it is used for shawarma, for serving lula kebab and shish kebab, fish is baked in it, pilaf and meat are cooked. This makes the dishes more tender and juicy.

Lavash snack is a universal dish; any products in various combinations are suitable for the filling, including fruits, sweet cottage cheese, jams, and chocolate. Children will love this option and will be a great snack on the go.

How to fry pita bread

To prepare thin flatbreads, you need a hot surface. The main condition: oil and fat are not used. Place the dough on a baking sheet and fry on both sides. The finished pita bread dries out very quickly. To avoid brittleness, remove it from the pan, sprinkle a little water and immediately cover with a towel. Use the cooled cakes immediately or store them in the freezer, simply wrapped in a bag.

Storage

Ready-made pita bread does not have to be used immediately. Some of the flatbreads can be kept in reserve.

Leftovers can be frozen and refrigerated or dried - the finished cakes are simply stacked, covered with a towel and stored for a week to two months. In this form they do not mold for a long time. To restore the softness of the pita bread, just sprinkle it with water and heat it up.

Yeast dough recipe

Wide round flatbreads are easy to make. We offer a way to quickly get pita bread fried in a frying pan without using fat. You can use yeast, which is what we will do. Below is a version of unleavened yeast-free dough. So, from the products we will need:

  • dry yeast - 1 tsp;
  • flour - 3 cups;
  • salt - 1 tsp;
  • sugar - 0.5 tsp;
  • vegetable oil - 1 tbsp. l.;
  • water (warm only) - 1 glass.

Cooking step by step

This is one of the options for using tortillas. Some of them can be rolled up and cooked into fried pita bread stuffed in oil or batter.

There are a lot of recipes. The convenience is that you can wrap and combine any products. Lavash can also be used instead of parchment for baking fish or meat, or for preparing pilaf. These dishes turn out unusually juicy and aromatic.

Yeast-free dough

In this case, the dough is prepared much faster than with yeast. Only water, flour and oil are used. You can knead in a food processor, or just by hand. We take:

  • 350 g of flour (its quantity may vary, it all depends on its quality);
  • glass of water;
  • 30 g vegetable oil;
  • a little salt.

You need to pour the flour in a heap on the table, make a small depression, gradually pour water and oil into it, add a little salt and gently knead the dough with a fork. It takes about five minutes. The dough turns out quite tight. We wrap it in cling film or simply cover it with a towel and let it “rest” a little. After 20 minutes, the dough needs to be kneaded again and divided into small pieces. Flatten each one by hand, roll in flour and roll out into very thin cakes about 2 mm thick.

The dough can be stretched a little with your hands, it is quite elastic and does not tear. Bake the flatbreads in a well-heated frying pan for a few seconds on both sides. Place the finished pita bread on a board, sprinkle with a little water and cover with a clean towel.

While the cakes are cooling, prepare the filling. It could be minced meat, fish or cheese with herbs. By the way, fried lavash with cheese called “Yoka” is very popular in Armenia. It is filled with filling, wrapped in an envelope and fried in a frying pan in oil. The melty cheese and crispy crust make this dish absolutely amazing. The recipe is very simple and takes little time.

Hot appetizer "Yoka"

So, let's try to cook Armenian fried lavash with cheese. Hard cheese needs to be grated on a coarse grater, chopped herbs: cilantro, green onions, dill and parsley. Their quantity depends on the taste, on average 100 g each.

Then mix with cheese, salt and pepper. Divide the pita bread into three parts, lay out the filling, and wrap it in an envelope or corner. Place in a heated frying pan, seam side down, and fry in vegetable oil on both sides until golden brown. Serve warm and as a separate dish, and in addition to broth or shish kebab.

What to make the filling from

Fried pita bread recipes are surprisingly simple and do not require any special culinary talent. There are no exact proportions here; you can safely experiment and try new combinations of products.

For example, these:

  1. Cottage cheese, salt, herbs, garlic, mayonnaise.
  2. Hard cheese, cottage cheese, garlic, fresh cucumber, dill, salt.
  3. Processed cheese, champignons fried with onions and carrots, herbs, sour cream.
  4. Salmon, greens, fresh cucumber, Adyghe cheese or feta cheese.
  5. Boiled eggs, rice, dill, sour cream.
  6. Crab sticks, boiled egg, processed cheese, herbs, garlic, mayonnaise.
  7. Smoked meat/sausage, herbs, sweet onions, mayonnaise.
  8. Boiled beets, carrots, nuts, garlic, mayonnaise.
  9. Shrimp, garlic, butter.
  10. Cheese, ham, tomatoes, garlic, sour cream.
  11. Fried mushrooms, pickled onions, suluguni, egg, greens.
  12. Cheese cheese, basil, unsweetened yogurt.
  13. Processed cheese, garlic, mayonnaise, dill.
  14. Roasted turkey, paprika, parsley.
  15. Salmon, bell peppers, goat cheese, yogurt.
  16. Chicken breast, green peas and garlic.
  17. Greek salad.
  18. Sour apple, pickled onion, herring.
  19. Nuts, boiled condensed milk.
  20. Apple, cottage cheese, sour cream, vanillin.

Fried pita bread is served separately, with various sauces and broth. Before adding the filling, it is recommended to soak the flatbread with sour cream or mayonnaise. You don't need a lot, otherwise the pita bread will spread. But if there is too little mayonnaise, the appetizer will turn out a little dry.

Cold lavash appetizer

If you don’t have much time, it’s much easier to prepare a cold appetizer from flatbreads. No need to fry anything. The prepared filling is simply rolled into pita bread.

For convenience, it is cut into portions. If desired, you can use a different serving: divide the pita bread into several parts, add filling to each and arrange in the form of envelopes or corners.

Alternatively, you can use a whole flatbread and fill it like a shawarma. In general, lavash is an absolutely democratic snack and welcomes any of the options. Use your imagination, open the refrigerator and start creating culinary masterpieces.

Cooking fried pita bread in batter

There is another way to make a hot snack from pita bread in a frying pan - fry it in batter. From the products we will need:

  • 3 sheets of pita bread;
  • suluguni cheese - 200 g;
  • smoked chicken - 200 g;
  • champignons - 350 g;
  • mayonnaise/sour cream - 4-5 spoons;
  • dill/parsley - a bunch;
  • 2 eggs;

Chop the champignons, fry with onions, set aside, let cool.

Cut the cheese into cubes. It’s not for nothing that we use suluguni in the recipe. Fried thin pita bread is especially good with cheese that melts. It adds juiciness to the dough and helps achieve a crispy crust.

Cut the smoked chicken into thin strips or cubes. We use only meat, remove the skin.

Chop the greens. Mix all the ingredients, season with mayonnaise or low-fat sour cream. If desired, you can add salt and ground black pepper.

Divide the pita bread into four equal parts, place the prepared filling in the middle of each, roll it into an envelope and dip it in batter. To do this, beat the eggs with salt with a fork.

Place each envelope on a heated frying pan, seam side down, and fry until golden brown.

Serve hot. You can take this snack with you on a picnic and heat it up on the spot by placing it on the grill for a couple of minutes.

Sweet rolls for kids

If you plan to go outdoors with children, you can think of a separate menu based on lavash for them. For this we use apples, cottage cheese, sugar.

If desired, you can add a little cinnamon or vanilla. Grind the fruits and put them in the microwave - this will make them a little softer. Grind the cottage cheese thoroughly with sugar and vanilla; if desired, you can use a blender. Combine with apples.

Grease a wide sheet of lavash with a thin layer of sour cream or thick yogurt, add the filling and carefully roll it up.

Preheat the oven, grease a baking sheet with oil or cover it with parchment and place the pita bread seam side down. For a golden crust, you can brush each top with beaten egg yolk.

Bake at 175 degrees for about 10 minutes.

Take out the finished rolls and cut them into rings while still warm. Let it cool. Place on a dish in the shape of a chamomile. Sprinkle powdered sugar or jam on top.

Well, the food is ready, the mood is festive, take your sunglasses and go relax in the fresh air!
