    Viennese waffles classic recipe

    What do most people associate with the name of the Austrian capital Vienna? Of course, with the waltz, Mozart and the famous Viennese waffles. They may not be a masterpiece of culinary art, but they glorified Austria no less than the great composers. Viennese waffles... soft, crispy and incredibly flavorful. Although…

    Frankly speaking, what we used to call Viennese waffles is actually a Belgian dessert. It was there that they came up with pie-shaped delicacies with large cells that can be filled with almost any filling: cream, syrup, jam, condensed milk, honey, ice cream and even fresh berries. In the old days, not only sweets were used as filling. Processed cheese, pate or bacon often played the role of filler.

    But no matter what the soft waffles are called, it doesn’t make them any less tasty. And to taste them you don’t have to go to Vienna (Brussels, Liege, etc.). You can make this classic European dessert in your own kitchen using your home waffle iron.

    The following products will be needed for this baking:
    flour– 300-350 g;
    butter– 50 g;
    eggs- 2 pcs.;
    milk– 300 ml;
    granulated sugar– 2 tablespoons;
    vanilla sugar– 1 teaspoon;
    baking powder and salt– 1/2 teaspoon each.

    The main trick of Viennese, and maybe not Viennese, confectioners is that they never beat the eggs whole. So, first you need to carefully break the eggs and separate the yolks from the whites. Leave the whites alone, they will be useful later, and add sugar to the yolks and grind thoroughly to obtain a white mixture. After this, add vanilla sugar to the mass and mix everything thoroughly again.

    Pour pre-melted butter into the egg mixture, add milk and salt. Mix everything again.

    Sift the flour through a sieve and mix with baking powder. After this, you should add it in small portions to the existing mixture, thoroughly mixing the resulting dough. There's no need to rush. It is important that the dough is homogeneous, without lumps.

    It's time to get back to egg whites. They must be beaten with a mixer into a thick foam, which should be carefully placed on the dough. These components must be mixed very carefully. A mixer is not suitable for this procedure; it is better to use a regular whisk. In this case, you should not make rotational movements. It is advisable that the whisk moves up and down.

    As soon as the dough is completely ready, you can start heating the waffle iron. By the way, before frying the first batch of waffles, you need to grease it with vegetable oil. Then there is no need to repeat this procedure, since the dough already contains a sufficient amount of oil.

    To make each waffle you will need two tablespoons of dough. They bake quite quickly - only 2-3 minutes. By this time they should have browned sufficiently. Viennese waffles are best served hot. They are good both with any sweet filling and “in their pure” form.

    Any housewife should know how to make soft Viennese waffles at home. This mouth-watering delicacy is loved by adults and children because it is tasty and aromatic due to the use of high-quality ingredients. To make it, you need to learn how to prepare the dough and how to properly place it in an electric waffle iron.

    How to make Viennese waffles

    Like other dishes, the preparation of Viennese waffles begins with the selection of a recipe and ingredients. Belgian products are distinguished by their splendor and softness, delicate taste and volume. It’s easy to bake them at home if you know the secrets of making the dough. The resulting preparations can be fastened together with sweet fillings or served with salty cheese and smoked meats, so the dish can easily be both a dessert and a snack.

    The composition uses flour, milk, eggs and sugar. A dough mass is mixed from them and baked using a waffle iron or sandwich maker. When filling the devices, you should make sure that the dough covers the cells completely, but does not spill out. After compacting it, you need to close the lid of the device and fry the crust for 4 minutes. For Soviet appliances, it takes a little more time - the products should be fried until they turn light beige so that they begin to crisp.

    Dough

    When preparing a Belgian snack, it is important to properly knead the dough for soft waffles. For it, take products at room temperature - butter or softened margarine, warmed eggs and base. The latter can be different - milk, kefir, cream and even yogurt without additives. Flour for the dough is taken from wheat, preferably finely ground and of the highest grade. If you take old flour, you will end up with heavy, damp products, and if you use dry flour, you will end up with crumbly and tasteless products.

    The dough recipe requires sifting the flour, which will give the products elasticity and oxygen saturation. For the recipe, you need to take only the freshest oil - if it was made more than 10 days ago, it is better to take another one. Instead of butter, you can use vegetable or cooking margarine. Use whole milk with a fat content of up to 2% to get a caramel taste, or baked milk. Sugar is taken in the form of sand or powder, and instead of chicken eggs it is good to take quail eggs.

    The required components will require baking powder or baking soda, and oil for coating the mold. If you bake the product in the oven, you can use silicone molds, which do not require lubrication. To knead a simple dough, you need to mix all the dry ingredients and pour out the liquid ones. For airiness, beat the whites separately from the yolk parts and add them at the end.

    • Butter - one package;
    • Sugar – 100 grams or more (depending on preference);

    3. Flour and baking powder are carefully poured into the mixture, lemon juice is added, after which the dough is kneaded using a mixer or a regular spoon.
    4. Using the same spoon, place a portion of batter onto the heated waffle iron. The readiness of the waffles is checked by their browning and the formation of a crispy crust.

    The dessert can be served hot with tea with various additives - fruit, ice cream, preserves, jams, nuts - immediately after removing from the waffle iron.

    Ingredients:

    • Premium baking flour – 3 cups;
    • Eggs – 6 pieces;
    • Sugar – 1 glass;
    • Milk – 2 glasses;
    • Butter – 1 package;
    • Baking powder for the dough;
    • Vanilla sugar is optional.

    Cooking steps:

    1. The softened butter is thoroughly ground with sugar and mixed with milk and eggs, beaten.
    2. Flour, vanilla sugar and baking powder are poured into the mixture. You can make the dough more airy and tender by passing the flour through a sieve.
    3. Once the dough has reached a uniform consistency, you can spoon it into a waffle iron and bake it. Since the finished baked goods increase somewhat in size, you need to carefully select portions for baking in the waffle iron.
    4. The readiness of the waffles is determined by the rich smell and rosy barrels.

    Viennese waffles with kefir

    You can choose any other fermented milk products as a replacement for kefir.

    Ingredients:

    • Flour – 2 cups;
    • Low fat kefir – 1 cup;
    • Half a package of butter or margarine;
    • Vanilla and regular sugar;
    • Baking powder;
    • Soda - half a teaspoon;
    • Salt – one pinch.

    How to cook:

    1. In a deep bowl, mix all the dry ingredients - soda, salt, flour.
    2. In another container, kefir, eggs and sugar are gently beaten. Dry ingredients are poured into the resulting mixture.
    3. The dough is thoroughly kneaded and butter is added at the end.
    4. Waffles are baked for several minutes until golden brown.

    Curd Viennese waffles

    Unlike classic waffles, curd waffles have an unusual taste and a delicate, airy texture.

    Ingredients:

    • Low-fat cottage cheese – 2 packs;
    • Sugar;
    • Butter – 100 grams;
    • Vanilla sugar;
    • Eggs – 3 pieces;
    • Flour – 100 grams;
    • Salt.

    Cooking sequence:

    1. In a bowl, butter is ground with the addition of sugar and salt.
    2. Cottage cheese and eggs are added to them. Homemade coarse-grained cottage cheese is best rubbed through a sieve to make it more airy.
    3. Flour is carefully poured into the resulting mass. It is best to stir the dough with a mixer or blender - this way its structure will be more uniform. The finished mass should be similar in structure to sour cream. If it turns out runny, it’s okay – it’s better to pour it into molds.
    4. The waffle iron must be lubricated with vegetable oil. Bake the waffles for 3-5 minutes until crispy.

    These waffles are served with tea or coffee with various sweet fillings and toppings. You can add fresh berries, fruits or nuts - this will make the dessert even tastier.

    Viennese waffles with rum

    The highlight of the recipe is the rich, unusual aroma of baking, which is added by adding rum to the dough.

    Ingredients:

    • Flour – 1 glass;
    • Eggs – 4 pieces;
    • Sugar – 200 grams;
    • Butter – 120 grams;
    • Dry yeast - half a tablespoon;
    • Milk – 2.5 cups;
    • Vanilla sugar.

    How to cook:

    1. The yolks and whites are carefully separated from each other. Using a mixer, beat the whites until stable foam peaks form - such that when the bowl is turned over, the mass remains in place. Afterwards, it is advisable to put the resulting mass in the refrigerator.
    2. In a blender bowl or mixer, mix the mixture of flour, salt and yolks until smooth.
    3. It is advisable to heat the milk in advance. Heat butter in a microwave oven or in a water bath. Oil and milk are poured into the resulting dough and mixed until the lumps are completely eliminated.
    4. Salt, sugar, rum, vanilla sugar and yeast are added to the container.
    5. The cooled protein mass is carefully introduced into the dough, everything is mixed several times and sent to rise in a warm place.
    6. The finished dough is poured in small portions into a waffle iron and baked until golden brown.

    1. The sour cream included in the baking recipe can be replaced with homemade mayonnaise.
    2. Adding half a teaspoon of turmeric to 2 cups of flour will allow you to achieve a bright, rich and ruddy shade of the finished baked goods.
    3. It is best to melt butter in a water bath. The most important thing is to prevent it from boiling.
    4. In addition to rum, you can pour cognac or liqueur into the waffle dough - the finished products will acquire a rich aroma with a slight hint of the drink.
    5. The softness of Viennese waffles is due to the increased oil content in the dough.
    6. To make an original and incredibly tasty dessert, just roll the waffles into a tube and fill them with filling. Waffles are rolled only when hot: immediately after removing them from the waffle iron with a knife and a towel, the baked goods are rolled into a tube and then carefully filled with cream or condensed milk.
    7. The waffle iron is specially prepared before baking: shortly before heating the surface, it is greased with oil. The non-stick coating of the waffle iron does not need to be processed - due to its peculiarity, it will not allow the dough to stick.
    8. You shouldn’t stack the finished waffles too closely - they will become soft. It is advisable to lay them out one at a time until they cool completely: this way they will retain their crispy crust longer after being pulled out of the waffle iron.
    9. You can reduce the calorie content of sweet baked goods if you use plain water instead of milk. These waffles will taste more bland and not as rosy. Baked goods made with milk are brighter, richer and softer.

    Airy Viennese waffles can be served both as a snack and as a main course, which is their significant advantage. It is a mistake to assume that this is only a sweet dessert. Waffles, in addition to honey, condensed milk, fruits and berries, can be filled with bacon, cheese and many other additives. The cooking options for this dish are simple, so even a novice cook can handle them at home.
