Muffins, pies and even cakes with the addition of this bright vitamin vegetable turn out very tasty; they are distinguished by a special moist structure. Today I want to share with you my favorite and (according to my family) most delicious recipe for chocolate pie with carrots. Carrot cake with nuts and cocoa is a wonderful option for quick baking and is also suitable for novice housewives. The batter is prepared in a matter of minutes, and all you need from special kitchen utensils is a whisk and a grater. A step-by-step recipe with photos will demonstrate in detail all stages of preparation.

Ingredients:

  • peeled carrots - 200 gr;
  • eggs - 2 pcs;
  • flour - 250 gr;
  • sugar - 150 gr;
  • refined vegetable oil - 100 g;
  • walnuts - 50 gr;
  • cocoa powder - 30 g;
  • salt - 1 pinch;
  • baking powder - 1 tsp. with a slide;
  • ground cinnamon‒ 1 tsp.

How to bake carrot cake with nuts and cocoa

Turn on the oven to 180 degrees and start working on the carrots. Grind it in a blender or you can grate it on a fine or medium grater.

Whisk the eggs with sugar and salt. You don’t need to be particularly zealous, just shake everything until smooth.

Now, add vegetable oil (necessarily odorless), carrots, chopped walnuts and the remaining bulk products to the eggs.

Mix all ingredients with a whisk until you obtain a thick, homogeneous dough. For this amount of dough, a mold with a diameter of 22-24 cm is suitable. Don’t forget to line its bottom with parchment.

It will take about half an hour to bake ours. You can check the readiness with a regular match - it should come out dry, without lumps of adhering dough.

Transfer the baked goods to a plate. For beauty and additional sweetness, you can dust its surface with powdered sugar.

As you can see, a simple carrot cake turns out airy, with a porous structure.

It's very soft, a little moist and delicious. And no one will ever guess that there are carrots in it.

Lenten carrot cake without eggs

You need:

  • grated carrots – 1.5 cups;
  • flour – 1 glass;
  • sugar – ½ cup;
  • vegetable oil – 2 tbsp. spoons;
  • baking powder - 2 teaspoons;
  • walnuts – ½ cup;
  • cinnamon – 1 tsp;
  • salt - a pinch.

To prepare Lenten carrot cake, first of all you need to mix grated carrots and sugar. Then you need to add butter and a small amount of flour with baking powder to the mixture. Knead the dough and gradually add the remaining sifted flour. Add chopped nuts and cinnamon to the prepared mixture. Stir again.

Take a baking pan, line it with greased parchment paper and pour the batter evenly. It should initially be medium thick. The pie is baked in an oven at a temperature of 200 degrees. Check it for doneness from time to time using a toothpick.

With semolina


Carrot cake is a great dessert for people on a diet.

You need:

  • semolina – 1 cup;
  • flour – 1 glass;
  • grated carrots – 2 cups;
  • kefir – 1 glass;
  • sugar -1 glass;
  • soda – 1 teaspoon;
  • butter – 150 g;
  • eggs – 2 pcs.;
  • vanillin – 1 teaspoon.

The preparation process will take very little time and effort:

  1. First of all, semolina is poured with kefir, infused for some time, after which the resulting mixture is well mixed.
  2. To prepare the pie you will need a couple of glasses of grated carrots, which You can chop it on a fine grater, but the pulp from a juicer is best suited for this purpose.
  3. The eggs are beaten together with sugar. Next add sifted flour, melted butter, vanillin and soda. There is no need to extinguish it, since kefir is present among the ingredients.
  4. Add semolina to the rest of the ingredients and knead the dough. It should be medium thick and without lumps.
  5. Place it in a baking dish lined with parchment paper and sprinkled with semolina and butter. Place the pie in the oven for 40-50 minutes.

In a slow cooker

Making carrot cake in a slow cooker is even easier than the usual way.

You need:

  • flour – 1 glass;
  • sugar – 1 glass;
  • grated carrots – 1 cup;
  • fatty oil – 100 g;
  • eggs - 2 pcs.;
  • baking powder - 2 teaspoons;
  • cinnamon - a pinch;
  • salt - a pinch.

Here everything is even simpler, because, perhaps, too smart technology will do most of the work itself.

  1. Beat eggs with sugar.
  2. Take a couple of carrots with the expectation that you will get a glass of finished puree.
  3. Dissolve the butter in a frying pan and pour it into the eggs along with the salt.
  4. Flour is mixed with cinnamon and baking powder. Combine both parts of the mixture and add grated carrots. Mix everything thoroughly with a spoon or fork.
  5. Grease the surface of the bowl with enough oil. Close the lid and set the device to the “Bake” program for an hour.

If the pie is not cooked enough, you can increase the cooking time. If desired, the finished dish is topped with crushed nuts or raisins.

You need:

  • orange zest and juice;

  • lime juice – 2 tbsp. spoons;
  • a pinch of baking powder.

You don't have to be a chef to perfectly replicate his recipe. Everything will turn out no worse for you!

  1. While you prepare the ingredients, set the oven to preheat to 180 degrees.

Step-by-step recipe with oatmeal

You need:

  • carrots – 1 pc.;
  • low-fat cottage cheese – 120 g;
  • kefir – 2 tbsp. spoons;
  • currants – 50 g;
  • oatmeal – 1 cup;
  • egg – 1 pc.;
  • sugar – ½ cup;
  • vanillin – 1 teaspoon;
  • to a teaspoon of baking powder.

Carrots are grated and oatmeal is ground into flour. The mixture is stirred and sugar with vanillin is added, then egg and kefir. The result is a thick dough that needs to be divided into a couple of parts. Place the first one in a greased pan and bake for 20-25 minutes.

Now it’s time to prepare the filling. Low-fat cottage cheese is mixed with currants, which, if desired, can be replaced with blueberries or any other berries suitable to taste. When the first cake is ready, place the filling on it and fill it with the remaining dough. Place your mold back in the oven for half an hour. As soon as it cools down, the pie can be served with aromatic tea.

With dried fruits


Carrot cake always looks sunny and bright, so it’s simply impossible not to try it!

You need:

  • grated carrots – 100 g;
  • dried fruits – 120 g;
  • flour – 1 glass;
  • eggs – 2 pcs.;
  • a piece of butter;
  • baking powder - 1 teaspoon;
  • sugar – 4 tbsp. spoons.

It will take you no more than an hour to prepare this dessert. But there will be enough pleasure for the whole evening.

  1. Beaten eggs are mixed with melted butter, and dried fruits are chopped with a knife or blender. You can also add nuts to them, which also need to be ground.
  2. The flour is mixed with baking powder and the rest of the ingredients. Mix everything thoroughly until smooth.
  3. Preheat the oven to 200 and place the resulting mixture in a baking dish. It is preferable to use silicone, as it will be easier to remove the finished dish from it. Bake carrot cake with dried fruits for 45 minutes.

You need:

  • grated carrots – 1 cup;
  • flour – 1 glass;
  • sugar – 1 glass;
  • sour cream – 2 tbsp. spoons;
  • orange – 1 pc.;
  • eggs – 3 pcs.;
  • soda - on the tip of a spoon;
  • salt - a pinch.

Rest assured, orange vegetables and fruits will coexist perfectly in one dessert, creating a truly unique taste.

  1. The orange is cut into small cubes directly with the peel and mixed with grated carrots.
  2. Separately, beat eggs with sugar, add flour and soda.
  3. Mix the carrot-orange part and flour. At this stage, you can add raisins to the dough, after dousing them with boiling water, and ground nuts.
  4. The thick dough is poured into the mold and distributed evenly over it. Don't forget to grease it with oil or cover it with parchment paper in advance.
  5. Preheat the oven to 160 degrees and bake the pie in it for half an hour. Periodically check the dessert for readiness with a toothpick.

With lemon cream


Even those who don't really like carrots will eat every last crumb of this carrot cake.

You need:

  • flour – 1 glass;
  • sugar – 1 glass;
  • grated carrots – 1 cup;
  • 30 ml vegetable oil;
  • a coffee spoon of slaked soda and cinnamon;
  • vanillin – 1 teaspoon;
  • lemon – 1 pc.;
  • condensed milk – 150 g;
  • sour cream – 100 g.

This dessert has a very interesting taste - with an aristocratic sourness.

  1. The eggs are beaten with sugar into a fluffy light foam.
  2. The sifted flour is mixed with soda slaked with lemon juice, cinnamon and vanillin.
  3. Grated carrots and butter are added to the eggs.
  4. Combine both parts and knead a thick dough.
  5. Place the mixture in a greased pan, preheat the oven to 180 degrees and bake the cake for 45 minutes.
  6. Now you have time to prepare the cream. For it, whisk condensed milk and sour cream, and then add the juice from half a lemon and zest. When the cake has cooled slightly, spread the cream evenly over it and leave to set.

Peel two large or three medium carrots, wash and grate on a fine grater.

Remove the zest from one lemon. Try not to touch the white layer of zest so that the pie does not taste bitter. This chocolate carrot cake can also be made with orange zest - it will also be very fragrant.



In a deep bowl, combine eggs with sugar.




Beat at high speed with a mixer into a fluffy light mass. You need to beat for about 4-5 minutes.




Add vegetable oil to the beaten eggs and beat again with a mixer. Then add grated carrots and lemon zest. Mix.




Sift wheat flour into a separate deep bowl, add cinnamon, cocoa, baking powder and mix everything well.




Pour the liquid mixture into the sifted flour and mix well with a spatula to form a fairly sticky chocolate dough.




Grease a baking pan with vegetable oil (I have a 20 cm diameter pan), pour out the dough and smooth the entire mass with a spatula.




Place the pie in an oven preheated to 180 degrees for 40 minutes. Be sure to check the readiness of the pie with a toothpick - if you stick it in the middle of the product and take it out, it should be completely dry.

By the way, try not to overcook the cake in the oven; it should be soft and slightly moist.




Allow the finished pie to cool, remove from the mold and can be decorated as desired: the pie can be sprinkled with powdered sugar or melted chocolate and covered with glaze.




This pie is perfect for freezing. Cut it into portions, wrap each in a bag or cling film and place in the freezer for storage. The pie can be thawed in the refrigerator or microwave. You can reheat it before serving if you wish, and it will taste just like fresh!



Chocolate nut pie with carrots and currants is not that difficult to make. It will be an excellent option for a family tea party. This portion is enough for the whole family, and if there are two of you, you can enjoy baking for several days. The next day, the carrot cake does not become dry, but remains the same as it was after baking. Therefore, you don’t have to worry about it.

In total, you will spend about 10 minutes preparing the dough and filling, and the pie will bake in the oven for about 50-60 minutes.

  • granulated sugar - 1 cup,
  • cocoa powder – 2 tbsp. heaped spoons,
  • soda - a pinch,
  • carrots – 1 pc.,
  • walnuts – 10-20 pcs.,
  • sour cream 15% - 1 tbsp. spoon,
  • vegetable oil – 3 tbsp. spoons,
  • black currants – 5-6 tbsp. spoons,
  • potato starch – 1 teaspoon,
  • wheat flour – 4 tbsp. heaped spoons.

Beat the eggs into a bowl and beat them with a mixer along with the sugar. Start at low speed and after a minute increase it to maximum. When the mass becomes fluffy and light, the mixer can be turned off and set aside.


For the filling, take peeled and washed carrots and cut them into pieces. Transfer to the chopper bowl. Peel the walnuts and add them there. Turn on the device and grind the filling until smooth. The mass will be in small pieces.


Pour half the flour and baking soda into a bowl with the egg mixture.


Add cocoa powder.


Stir gently and pour in vegetable oil.


Add sour cream.


Add carrots and nuts.


Peel the currants from the branches and roll in starch. Place in a bowl.


Add the remaining flour and mix well again so that there is no dry flour left in the dough. Pour it into a greased pan and put it in the oven.


Bake at 180 degrees for 50-55 minutes. Check doneness with a skewer. If it is dry, then you can turn off the heat.


Before serving, sprinkle the pie with powdered sugar and garnish with currant sprigs.

In order to diversify your homemade baking, you don’t need to run to the store for expensive and gourmet products, just look in the refrigerator and come across carrots, from which you can bake a fragrant carrot cake or cupcake, depending on the shape you choose. Ordinary products that are familiar to our body, and as a result you will get unusual baked goods, one might even say a masterpiece!


Carrot pie in the oven is quite easy to prepare. If you want your baked goods to be also healthy, we recommend adding various dried fruits (raisins, dried apricots, prunes) or nuts to it; the taste will not become worse, but will only improve. Since carrots after heat treatment are unlikely to remain as healthy as fresh ones, but dried fruits will not lose their usefulness and will perfectly complement carrots. You can also bake the cake not in one large pan, but in small muffin tins.

In baked goods, carrots are practically not felt, and since the cocoa makes the dough chocolatey, it is almost impossible to see them there. My children and I liked this delicious dessert; I will say even more, I used carrot cake in making a children's cake.

To make carrot cake in the oven you will need the following ingredients:

Ingredients:

  • Fresh carrots - 2 pieces or already grated - one glass,
  • Chicken eggs - 2 pieces,
  • Wheat flour - 1 cup,
  • Cocoa powder – 2-3 tablespoons,
  • Granulated sugar - 1 cup,
  • Butter – 100 grams,
  • Baking powder for dough – 10 grams,
  • Ground cinnamon – 1 tbsp. spoon,
  • One pinch of salt.

Cooking process:

First, let's take care of the carrots, which need to be thoroughly washed, then peeled and then grated on a medium grater. Important: we use fresh carrots!!!

Then melt the butter in the microwave or in the usual way on the stove.

Break slightly cooled eggs into a separate cup and add granulated sugar. Beat with a mixer or whisk, beat until the sugar crystals are completely dissolved, but if you want to beat the eggs into foam, then this is even better, it will make the cake more airy.

Now the beaten eggs should be mixed with grated carrots and melted butter. Mix. Then add cocoa, ground cinnamon and salt, mix again.

Sift the flour into a separate cup and then mix the flour with baking powder.

Why sift flour for baking? Thanks to the sifting of the flour, the dough will be enriched with oxygen, which will make it even fluffier.

Next, add flour and baking powder in small portions to the carrot mixture. Mix everything until smooth so that there are no large lumps.

Then grease the pan in which we will bake the carrot cake generously with butter and, if desired, you can also sprinkle with semolina, thanks to which the bottom of your cake will have a beautiful and crispy crust. The safest option, of course, is a springform pan with a non-stick coating or a pan lined with oiled paper.

Pour the finished dough with carrots into a baking dish or pour into small cupcakes and place in an oven preheated to 180° degrees for 25 - 30 minutes. How long to bake cupcakes or a pie largely depends on the diameter of the mold; small cupcakes bake very quickly.

Check the doneness of your carrot cake using a wooden stick or toothpick.

If your cake turns out to be large, you can easily cut it into two layers and layer it with your favorite cream or jam.

But many people do not eat animal products, which is why we will give another recipe for making carrot cake or pie, but lean and with nuts.

    Lenten carrot cake

To make Lenten Carrot Pecan Pie or Cake, you will need the following ingredients:

  • Carrots (large) – 3 pieces,
  • Nuts (any) – 200 grams,
  • Vegetable oil (odorless) – 0.5 cups,
  • Water – 1 glass,
  • Granulated sugar - 0.5 cups,
  • Baking soda, slaked with vinegar – 1 teaspoon,
  • Wheat flour - 1.5 cups,
  • Salt to taste
  • Cinnamon or nutmeg to taste and desire.

Proper preparation of lean carrot-walnut cake in the oven

To prepare this cake, you can use several types of nuts, which need to be fried in a dry frying pan until light golden brown, and then the nuts need to be chopped with a knife or using a blender into fine crumbs.

We wash and peel the carrots, then grate them on a medium grater and mix the grated carrots with the nut mixture.

Add vegetable oil to the resulting mass; you can use any oil, it is important that it is odorless.

In a separate cup, you need to quench the baking soda with vinegar and then add it to the total mass. Mix everything thoroughly.

The flour must be sifted and then mixed with ground cinnamon or nutmeg and salt. Add the resulting mixture to the total mass in small portions, stirring thoroughly so that there are no lumps.

The form in which we will bake Lenten carrot cake or muffins should be greased with vegetable oil and lightly sprinkled with breadcrumbs or semolina. Then pour the dough into the mold and send it to the oven preheated to 180-200° degrees for 25 - 30 minutes.

The finished cake can be sprinkled with powdered sugar pre-mixed with ground cinnamon. You can also add orange zest to the cake for flavor during cooking.

This carrot cake would be a great option for a weekend breakfast when the whole family gathers at one table. Cook tasty and healthy.
