At the same time, Kharms was a well-known freak and loved to play the eccentric: he defiantly greeted every street lamp on the street, walked with a painted face, “because a clean face is disgusting,” and gathered a crowd of onlookers around, waving a red flag at the top of a tree.

It is clear that such a person could not live in an ordinary cozy room with floral wallpaper. There were legends about his house. People who came to Kharms for the first time first tried to understand what they heard was true and what was not. They talked, for example, about the fantastic “machine” that Kharms himself built and demonstrated to his guests. The poet's room, indeed, was filled with wires and springs for some time. No one knows why, but rather for a hoax.

The walls were covered with aphorisms from floor to ceiling, and a lamp with a wide cardboard shade hung on the ceiling. On it, Kharms drew caricature portraits of friends and a house with the inscription “Children are killed here.” Yes, the famous children's poet, as his wife said, “all my life I could not tolerate children. I just couldn't stand them. For him they were - ugh, some kind of rubbish.”

Wheat flour – 2 cups
Butter – 100 gr. (and a little more for greasing the mold)
Egg – 2 pieces
Sugar – 1.5 cups
Vanilla sugar – 10 gr.
Baking powder – 1 teaspoon
Berries (fresh or frozen) - optional
Hazelnuts or almonds - optional

Preparation:

1. For the dough, mix butter with flour, baking powder and 0.5 cup sugar (if desired, you can add another 1 tbsp. lemon juice). Rub with your hands until a crumbly mixture forms. Place the dough in the refrigerator.

2. For the curd cream, beat the eggs with the remaining sugar (plus vanilla sugar) until creamy, add the cottage cheese and beat again.

4. Grease the baking pan butter and lay out half the dough, lightly crush the crumbs with your hands. Place the curd filling on the dough, distribute the berries on top (optional, you can do it without the berries).

  • 350 g butter;
  • 2 eggs;
  • 250 g sugar;
  • 500 g cottage cheese;
  • 400 g flour;
  • 200 ml homemade heavy cream;
  • 100 g oatmeal;
  • 50 g semolina;
  • cinnamon;
  • salt;
  • soda;
  • half a kilogram of apples.

Sequence of steps:

  1. For shortbread, you need to knead the dough by mixing 200 g of butter of a creamy consistency with 360 g of flour, salt and soda until it becomes buttery crumbs. Then beat one egg into it, collect all the soft mass that will not crumble and stick to your hands. Distribute the shortbread dough evenly over the baking sheet and you can proceed to the next layer.
  2. For a delicate curd layer, rub the curd through a sieve. This will give lightness and airiness to the cream. Mix cottage cheese with egg, 100 g of sugar and semolina. Let's try a very interesting shortbread Apple pie, the recipe for which I found on the website “Izuminka” called “Pyaterochka”. Respect to the author for such a delicious pie! I liked the recipe for its unusualness: even five layers! Shortbread, curd cream, apples with cinnamon, streusel crumbs and to top off this “culinary madness” - caramel creamy topping! This is the pie. We must try it!

According to cooking technology this recipe It seemed to me very similar to my favorite shortbread cakes, which can be made with cottage cheese, jam, or apples. Only there is meringue on top instead of crumbs and caramel. I don’t really like caramel - I once made a Sunflower pie with it - there were almost teeth left in the viscous, viscous caramel. So you decide whether to pour it over the pie or not. And I won’t cook it until it’s sticky, but pour it with sweet cream!

Ingredients for shortbread apple-curd pie:


  • Flour – 2.5 cups;

Peel the apples and grate them on a coarse grater. Add a pinch of cinnamon for flavor and stir.

Preparing confectionery crumbs "streusel" - this german recipe sprinkles for decorating pies. Grind 100 g of softened butter with 0.5 cups of sugar.


Add 3 tablespoons of flour and grind again.


Then add oatmeal and mix. The recipe calls for 3 tablespoons, but this didn’t seem enough to me, because then you need to crumble the streusel onto the cake - and it turned out so soft because of the butter that it didn’t want to crumble. So I added another half cup of oatmeal. Note: it is better not to grind the flakes with your hands, but in a blender, this way the oat crumbs will turn out smaller and more tender. Although I liked the large version.


Sprinkle the pie with crumbs and place in the oven for 40-45 minutes at 180C.

Bake until golden. The aroma is amazing!

5 layer

If you want to make caramel, mix the cream with 0.5 cups of sugar and 50 g of butter, cook until the desired consistency. But I don’t like caramel, so I simply melted the indicated products in a saucepan and poured this creamy topping over the pie. By the way, my topping had no intention of congealing... Or you could try pouring just cream whipped with powdered sugar over the pie. The fifth layer may not be necessary, but it seems to me that it, together with the curd layer, gives the pie tenderness, soaking up the cereal crumbs.

Cut the pie into portioned squares.

Let it cool a little, and you can try the amazing shortbread-apple-curd pie!

Tart dough recipe. Combine powdered sugar, sifted flour and salt in a bowl. Cut the cold butter into small cubes and add to the dry ingredients. Grind into crumbs. Add the egg and mix well. Quickly knead the shortbread tart dough, wrap in film and refrigerate for at least 30 minutes.

Grease a tartlet mold (approximately 23-26 cm) (a short form with a split bottom) with butter and sprinkle with flour. Carefully place the foil and sprinkle some weight on top in the form of beans, rice, etc. Bake in a well-heated oven for 30-40 minutes at 180 degrees. Cool.


Recipe for cream based on cottage cheese and cream. Soak the gelatin (I used slices) in very cold water(preferably with ice) for 30 minutes.

Cool the cream in advance (place it in the freezer for 7 minutes). Beat the cottage cheese well with a blender until smooth. Add powdered sugar, vanilla sugar and beat again. Set aside for now.

Separately, whip the cold cream until stiff peaks form. And add to the curd mass.

Take out the gelatin and squeeze it out. Add 50 ml of water and place on the stove in a small saucepan. Heat until small bubbles appear, but do not boil. Stir until completely dissolved. Add to the creamy curd mixture and stir. The cream based on cottage cheese and cream is ready.
