Charlotte is one of the easiest to prepare, inexpensive and always a win-win pies. It happens, of course, sometimes he gets capricious, but this is completely fixable. In essence, a charlotte is an ordinary sponge cake, supplemented with filling. The dough is based on only three required ingredients: eggs, sugar and flour. The classic filling for charlotte is apples. But today I propose to step back from the classics and replace apples with a wonderful sweet and sour berry - cherries. I assure you, your Charlotte will only benefit from such a replacement! Delicate, porous biscuit dough and juicy, sweet and sour filling complement each other perfectly. Since we can’t find fresh cherries now, we will have charlotte with frozen cherries. You need to work with it a little differently than with fresh berries. Below I will tell you in detail how to ensure that frozen berries do not in any way affect the taste and quality of your charlotte.

Ingredients:

  • frozen cherries (pitted) – 1 package,
  • egg (C1) – 4 pcs.,
  • sugar – 150 g,
  • flour – 150 g,
  • vanillin – 0.5 sachet,
  • baking powder – 1 tsp. (without slide),
  • salt - a pinch,
  • starch - 2 tbsp. l. (for cherries),
  • powdered sugar - to taste when serving.

*form diameter – 20 cm.


How to cook charlotte with frozen cherries

Charlotte biscuit dough can be kneaded in two ways: separate the whites from the yolks and beat them until fluffy foam separately from each other (sugar is introduced into the whites in three steps); or leave the eggs whole, mix them with sugar and beat. To be honest, I didn’t notice much difference in the rise of the dough when baking, so I choose the less labor-intensive option - I just mix eggs with sugar.


Next, beat the eggs with sugar. Now in terms of time - the longer you beat the egg mass, the fluffier it will turn out. Ideally, the mass should turn white and increase in size at least 2 times. With a mixer, this takes about 5-7 minutes. (the speed increases gradually), in this case it is not necessary to add baking powder to the dough - it will rise perfectly without it due to well-beaten eggs. If you do not have an electric assistant, it is permissible to beat the eggs with sugar only until foam appears, and baking powder will help the dough rise and become airy.


Add vanillin, salt and baking powder to the flour. Sift it into a bowl with the egg mixture.


Then we arm ourselves with a spatula (or spoon) and stir the flour into the egg mixture until the dough is completely homogeneous. A mixer (or blender) cannot be used here! They will deprive the baked goods of airiness and make the dough dense and rubbery. The finished dough is very light, weightless, and medium thick.


The dough is ready, now let's make the cherry filling. Pour the frozen berries from the bag into a bowl and sprinkle with starch. Shake gently so that the starch evenly coats each cherry. There is no need to defrost the berries first.


Then turn on the oven to warm up to 180 degrees, line the baking dish with baking paper (bottom and sides). I like it when the pies turn out high, so I take a small mold - 20 cm. When choosing a mold, be sure to ensure that the dough fills it no more than half. Pour most of the dough into the mold (about 2/3), lay out the cherries. If the berries have time to thaw a little, don’t panic! Just drain off the excess liquid as much as possible, and starch can easily handle what remains. Cover the cherry filling with the remaining dough.


First 10 min. bake charlotte at 180 degrees. After heating, reduce to 160-170 and bring the pie to readiness. The total baking time is about 40-50 minutes. But, again, don’t forget about the features of your oven and start looking at the charlotte through the glass as soon as the incomparable aroma of cherry and vanilla begins to spread through the apartment. You cannot open the oven door for the first 20-25 minutes! Afterwards, you can carefully cover the pie if the oven is baking too much on top.

Remove the finished charlotte from the mold, let it cool, sprinkle with powdered sugar to taste and you can serve!

  2. It is best to cook charlotte in the oven, so it will turn out airy. A multicooker is also used if there is simply no other option. In this case, the multicooker bowl must be lined with parchment paper. If you do not do this, you will not be able to remove the cake carefully.
  3. Charlotte with cherries can be prepared at any time of the year. For example, you can freeze cherries or strawberries for the winter. The pie will turn out no less tasty.
  4. The pie is served warm along with sour cream and jam. If you want to decorate, powdered sugar will do. Confiture diversifies the taste. The proposed recipe will not take much time.
