  1. Wash the peas thoroughly under running water. Pour it into the pan and add the smoked pork ribs. Pour the ingredients with two liters of water. Cover the pan with a lid and place the pan on the stove. Before boiling, remove the foam with a slotted spoon. Reducing the heat, cook the peas until soft.
  2. Cut the sausage with lard (we used Krakow sausage) into small cubes.
  3. Dice the onion as well.
  4. Let's start frying the sausage in a frying pan. When it is fried a little, add chopped onion to it.
  5. Peel the carrots with a vegetable peeler and cut into pieces.
  6. When the sautéed onions become soft, add the chopped carrots. Fry the vegetables and sausage for another 5 minutes, stirring them occasionally. Then add thick tomato paste and garlic crushed through a special press. Bring the vegetables and pasta to a boil and remove from heat.
  7. Remove the ribs and one third of the boiled peas from the pan. Add the fried vegetables to the pan.
  8. Using an immersion blender, puree all the ingredients.
  9. Return the chopped smoked meats and the rest of the peas to the soup.
  10. Next, throw in spices, salt and chopped herbs.
  11. Boil all the ingredients together for 2 minutes after boiling, turn off the heat. Let's give ready-made dish let sit for 10-15 minutes, serve with crackers, garnished with parsley.

Kharcho soup acquires a unique taste when replacing beef meat with smoked ribs. To prepare it you need to stock up on:

  • 500 g ribs;
  • 1/3 tbsp. walnuts;
  • 1/3 tbsp. rice;
  • 1 tbsp. l. tomato sauce;
  • 1 onion;
  • 2 tbsp. l. olive oil;
  • 0.25 tsp khmeli-suneli;
  • a bunch of cilantro;
  • several cloves of garlic;
  • a little black allspice;
  • 2 liters of water.

Fry the ribs until a crust forms, without using oil. Then they are filled with the required amount of water and set to cook the broth for an hour.

  • medium carrots – 1 pc.;
  • 2 bay leaves;
  • salt to taste;
  • spices at your discretion.
